Pork and Beans Bread
- 15 oz. pork & beans (Van Camps)
- 4 beaten eggs
- 1 C vegetable oil
- 1 t vanilla
- 2 C sugar
- 1 t baking soda
- 1/2 t baking powder
- 1/2 t salt1 1/2 t cinnamon
- 1 C chopped pecans
- 3 C flour packed
Spray two 9 x 5 x 3 loaf pans with Pam.
Don't drain beans. Pour into feed processor until pureed smooth.
Place eggs in large bowl. Stir in pureed beans and mix well. Add oil and vanilla. Mix well. Add sugar, spices and chopped nuts. Stir. Add flour gradually.
Divide batter between two pans. Bake at 350 degrees for 50 - 60 minutes. If tester comes out dry, cool for 20 minutes. Run knife around all sides of pan and tip out. Cool completely and wrap in plastic.
Can be frozen for up to 3 months.
