Cold Noodle Salad

Combine the cucumber, scallions and red bell pepper in a medium bowl and refrigerate
- 1/2 C julienne cucumber
- 1/2 C chopped fresh scallions
- 1/2 C julienne red bell pepper
- 1/2 C julienne carrots
- 3/4 C sliced shitake mushrooms
- 2 T black sesame seeds
- 1/4 C water
- DRESSING
- 2 T lemon juice
- 1 T fresh ginger juice
- 1 T sesame oil
- 1/4 t red cile flakes
- 1 T sugar
- 1 t salt
- pepper
- 2 C cooked udon noodles
Mandarin Pasta Salad

Cook pasta and rinse with cold water and drain
- DRESSING
- 1 t grated fresh ginger
- 1 garlic clove pressed
- 1/3 C rice vinegar
- 1/4 C orange juice
- 1/4 C vegetable oil
- 1 t sesame oil
- 1 envelope Lipton's onion soup mix
- 2 t sugar
- MAIN SALAD
- 8 oz. bow tie pasta, cooked
- 1/2 cucumber scored, seeded and sliced
- 1/2 C diced red pepper
- 6 oz of fresh spinach leaves
- 1 can drained mandarin oranges
- 2 C of diced cooked chicken
- 1/2 C toasted sliced almonds
Pineapple Rum Upside Down Pound Cake

Combine butter and brown sugar in a large skillet and heat until bubbly
- For the sauce:
- 1/2 C butter
- 1/2 C light brown sugar
- 1 large can pineapple slices (10)
- 1/4 C Meyer's dark Jamaican rum
- 1/2 C heavy cream
- 10 large maraschino cherries, drained well
- For the cake;
- 2 C sifted cake flour
- 1/4 t salt
- 1 C butter, room temperature
- 1 3/4 C sugar
- 5 large eggs, room temp
- 2 t dark Jamaican rum
- For the glaze:
- 4 T butter
- 2 T water
- 1/2 C sugar
- 1/4 C dark rum

Brussel Sprouts with Sherry-Asiago Cream Sauce

Place brussel sprouts in a steamer and steam in a large saucepan until tender
- 1 pound brussel sprouts, trimmed and halved
- 1 T extra virgin olive oil
- 2 T minced shallot
- 1 T flour
- 2/3 C low fat milk
- 2 T sherry
- 1/3 C finely shredded Asiago cheese
- 1/8 t salt
- pepper to taste
Vegetarian Chili

Heat the olive oil in a large pot over medium heat
- 1 T oilive oil
- 1/2 medium onion, chopped
- 2 bay leaves
- 1 t ground cumin
- 2 t dried oregano
- 1 T salt
- 2 stalks celery, chopped
- 2 green bell peppers, chopped
- 2 jalapeno peppers, chopped
- 3 cloves garlic
- 2 (4 oz) cans chopped green chile peppers, drained
- 2 (12 oz) packages vegetarian burger crumbles
- 3 (28 oz) cans whole peeled tomatoes crushed
- 1/4 C chili powder
- 1 T ground black pepper
- 1 (15 oz) kidney beans drained
- 1 (15 oz) garbanzo beans, drained
- 1 (15 oz) black beans
- 1 (15 oz) whole kernel corn
