Stroganoff-Style Beef with Broccoli

In a small bowl, stir together sour cream and dillweed; set aside
- 1/2 C light dairy sour ream
- 1/4 t dried dillweed
- 1 pound boneless beef top round steak, trimmed and cut into thin bite-size strips
- 1 T cooking oil
- 1 small onion, cut into 1/2 inch thick slices
- 1/2 t bottled minced garlic
- 3 C dried wide noodles
- 3 C broccoli florets
- 1 14-ounce can beef broth
- 3 T tomato paste
- 1 t Worchestershire sauce
- pepper
Taco Casserole

Cook beef in 10 inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown, drain
- 1 1/2 pounds lean ground beef
- 1 can (14.5 oz) diced tomatoes with green chilies, undrained
- 1 can (10.75 oz) condensed cream of onion soup
- 1 envelope Old El Paso taco seasoning mix
- 1/2 C water
- 6 corn tortillas cut into 1/2 inch strips
- 1 C shredded cheddar cheese (4 oz)
- 3 medium green onions, sliced
- 1/2 C sour cream
Peach Bread

- 3/4 C softened butter
- 8 oz. cream cheese
- 2 C sugar
- 2 beaten eggs
- 1/2 t almond extract
- 1 1/2 C mashed peaches
- 3 C flour

- 1/2 t baking soda
- 1/2 t salt
- 1 C chopped blanched almonds

- 1/2 C frozen orange juice concentrate
- 2 beaten eggs
- 4 t. baking soda
- 1 t. salt

- 4 C flour

Classic Macaroni and Cheese

Pulse bread and butter in food processor until crumbs are no larger than 1/8 inch, ten to fifteen 1 second pulses
- For the bread crumb topping:
- 6 slices of white sandwich bread torn into rough pieces
- 3 T unsalted butter (cold) cut into 6 pieces
- For the pasta and cheese:
- 1 pound elbow macaroni
- 1 T salt
- 5 T unsalted butter
- 6 T flour
- 1 1/2 t mustard powder
- 1/4 t cayenne pepper
- 5 C milk
- 8 ounces Monterey Jack cheese shredded (2 cups)
- 8 ounces sharp cheddar cheese shredded (2 cups)
- 1 t salt
Creamy Spinach Bake

In a bowl, beat the cream cheese until smooth
- 2 packages (6 oz each) cream cheese, softened
- 2 cans (10 3/4 oz) condensed cream of mushroom soup, undiluted
- 4 packages (10 oz) frozen chopped spinach, thawed and well drained
- 2 cans (2.8 oz) french-fried onions
- 2/3 C crushed saltines
- 1/4 C butter
Overnight Eggnog Streusel Coffee Cake

- STREUSEL TOPPING
- 1/3 C granulated sugar
- 1 T flour
- 1 t butter
- 1/2 t nutmeg
- COFFEE CAKE
- 1 C sugar
- 1/2 C butter
- 1 C eggnog
- 8 oz sour cream
- 1 t rum extract
- 2 eggs
- 2 1/2 C flour
- 1 1/2 t baking powder
- 1/2 t baking soda
- 1/2 salt
- EGGNOG GLAZE
- 1/2 C powdered sugar
- 1 - 2 T eggnog
Mary's Sweet Potatoes

- 3 C mashed sweet potatoes
- 1/2 t salt
- 1/2 C sugar
- 1 t vanilla

Peach Cobbler

- Spray a 9 x 13 pan with Pam
- 10 C frozen sliced peaches (2 1/2#)
- 2 T lemon juice
- 1 1/2 C sugar
- 1/4 t salt
- 3/4 C flour
- 1/2 t cinnamon
- 1/2 C melted butter
