Pecan Oatmeal Chocolate Chip Cookies

Begin with combining your softened butter and brown sugar in the bowl of an electric mixer
- 2 sticks butter, softened (1 cup)
- 1 1/2 cups packed brown sugar (plus more for sprinkling)
- 1 egg
- 1 teaspoon vanilla

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt

Ranch Style Shrimp

Shell and devein shrimp; rinse and pat dry
- 1 1/2 lb. medium shrimp
- 8 Tbs. (1 stick) butter
- 6-8 large cloves garlic, mashed
- 2 Tbs. olive oil
- 2 large shallots, thinly sliced
- 8 med. mushrooms, sliced
- 2 CA chilies, roasted, seeded & diced
- 1 green onion, minced fine
- 1 C. canned diced tomatoes, with juice
- 1/2 C. tomato sauce

- 1-2 jalapeños, minced fine
- Salt & white pepper
- Juice of 1 limón (lime)

- 1/3 cup chopped fresh cilantro

- 1 tablespoon minced chipotle chile, canned in adobo sauce (I used about 1.5 tbsp mince chipotles + 2 tsp adobo sauce)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 teaspoons fresh lime juice
- 1/4 teaspoon salt
- Salad:
- 4 cups shredded romaine lettuce
- 2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts) (I seasoned some chicken with salt and pepper, then grilled it on the George Foreman Grill)
- 1 cup cherry tomatoes, halved
- 1/2 cup diced peeled avocado
- 1/3 cup thinly vertically sliced red onion
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (8 3/4-ounce) can no-salt-added whole-kernel corn, rinsed and drained

- 2 cups fresh raspberries (I felt like it could have used a few more raspberries, so next time I make it I'm going to try it with 3-4 cups of raspberries instead)
- Melted chocolate, whipped cream, fresh raspberries, for garnishmen
