To prepare the base Preheat oven to 325 degrees
- For the base
- 16 tablespoons (1 cup or 2 sticks) unsalted butter, softened
- 2 cups packed brown sugar
- 1/2 to 1 teaspoon instant espresso powder
- 1/2 teaspoon salt
- 4 large eggs, at room temperature
- 2 teaspoons vanilla
- 4 ounces finely chopped unsweetened chocolate, melted and cooled slightly
- 1 cup all-purpose flour
- For the cookie dough
- 12 tablespoons (3/4 cup or 1 1/2 sticks) unsalted butter, softened
- 3/4 cup packed brown sugar
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 3 tablespoons milk, at room temperature
- 2 teaspoons vanilla
- 1 1/2 cups all-purpose flour
- 8 ounces chopped bittersweet chocolate (small pieces)

In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 3 tsp pumpkin pie spice (Didn't have any on hand, so I used apple pie spice and it was great!)
