Lime-Jalapeno Chicken

Tangy, mildly spicy and tender, this chicken is delicious with black beans and salsa
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons canola oil
- 1 tablespoon white vinegar
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1 jalapeno, sliced
- 1-1 1/4 pounds boneless, skinless chicken breasts, trimmed of fat, tenders removed
Date Surprise Cookies

Beautifoul and delicious, these filled cookies are a Christmas treat
- Cookie:
- 3 cups flour
- 2 tsp bkg powder
- 1/2 tsp salt
- 2/3 cup butter or shortening
- 1/2 cup brown sugar
- 1 beaten egg
- 1 tsp vanilla
- 1/3 cup milk
- Filling:
- 2 cups chopped dates
- 2/3 cup sugar
- 2/3 cups boiling water
- 1 tblsp lemon juice
- 1 tblp butter
- You may choose to buy solo date filling in a can instead.
Grams graces lemon cake

Mix the cake ingredients and bake in a 9-13 " pan for35 minutes @ 350*
- Glaze:
- 1 pkg lemon cake mix
- 1 pkg instant lemon pudding mix
- 3/4 cup oil
- 3/4 cup water
- 4 eggs
- 2 cups powdered sugar
- 2 tblsp butter, melted
- 2 tblsp water
- 1/3 cup lemon juice

- 1/2 tsp cinnamon sugar

- 1 tsp orange zest

- 1/2 cup onion, chopped
- 1/2 cup chopped carrots
- 1-2 tsp minced garlic
- 1/4 cup guiness
- 1/4 cup red wine
- 3/4 cup beef broth
- 1/4 tsp ea sage, marjoram, basil, oregano
- 2 tblsp worchestershire sauce
- 1 cup peas
- 2 tblsp butter,melted
- 2 tblsp flour

- 2-3 cups cubed corn beef
- 3 cups cut up cabbage
- 3 sliced carrots
- 3/4 cup onions, diced
- 3/4 cup frozen veg
- 1/2 cup red bell pepper, cut up
- 2 tblsp flour
- 3 cups beef broth, or left over cooking liquid from corn beef
- 6 med potatoes, cut in quarters
- 1 egg
- 1/2 cup sour cream
- 1 tblsp horseradish
- 1/2 cup or more warm cream
