Key Lime bars
Thick graham cracker cookie crust with a fluffy lime top layer
- 8 inch square pan
- 5 graham crackers
- 3/4 cup flour
- 1/2 cup brown sugar
- 1/2 cup butter, cubed
- 1 egg
- 3 eggs, dvd.
- 1/2 cup lime juice
- 1 can eagle brand milk
- Dash each salt, cream of tartar
In the cuisinart pulse crackers till fine. Then add the flour and sugar and pulse to combine. Then add the butter and pulse to make a crumbly texture. Then add the egg and pulse to combine.
Pat into pan and pre bake 10 minutes@ 325*
Meanwhile separate two of the eggs. Into the yolks add the third egg. Beat slightly. Then add the lime juice and the sweetened condensed milk. Into the egg whites add the pinch of salt and cream of tartar. Beat till you have a stiff peak. Fold onto the egg yolk mixture. Pour into crust and return to oven for 10 -15 minutes till slightly set. Cool then refrigerate.
