- 2 8 oz pkg cream cheese
- 3/4 cup sugar
- 1 egg
- 2 tsp vanilla
- 1/4 tsp salt
- Glaze:
- 2 1/2 cup powdered sugar
- 1/4 cup milk
- 1 tsp vanilla
- Toasted almonds

- 2 tablespoons orange-juice concentrate, thawed
- 1 tablespoon finely chopped chipotle peppers in adobo sauce (see Cook Tips)
- 1 tablespoon balsamic vinegar
- 2 teaspoons unsulfured molasses
- 1 teaspoon Dijon mustard
- 1 pound boneless, skinless chicken breasts, trimmed

Black Bean & Salmon Tostadas

Pickled jalapeños, cilantro and avocado perk up convenient canned salmon for a quick tostada topping
- 8 6-inch corn tortillas
- Canola oil cooking spray
- 1 6- to 7-ounce can boneless, skinless wild Alaskan salmon, drained
- 1 avocado, diced
- 2 tablespoons minced pickled jalapeños, plus 2 tablespoons pickling juice from the jar, divided
- 2 cups coleslaw mix (see Tip) or shredded cabbage
- 2 tablespoons chopped cilantro
- 1 15-ounce can black beans, rinsed
- 3 tablespoons reduced-fat sour cream
- 2 tablespoons prepared salsa
- 2 scallions, chopped
- Lime wedges (optional)

- 3/4 tsp salt

- 2 cups sour cream

- For the streusel,
- 3/4 cup flour
- 3/4 cup sugar
- 1/4 cup butter
- For the glaze,
- 1/2 cup sugar
- 1/3 cup lemon juice
Sweet and sour chicken or pork

Quick and easy dinner, not to many ingredients and very adaptable
- Sauce:
- 2 cups brown sugar
- 1-1/2 cups vinegar
- 2 tblsp paprika
- 2 tsp salt
- 1 lg can chunk pineapple
- 1 tsp grated garlic
- 2 tsp grated ginger
- 2 tblsp water
- 4 tblsp cornstarch
- Ingredients for stir fry:
- 4 chicken breast, or 1 lb pork cut into cubes
- 1 egg white
- 2 tsp soy sauce
- 1 tblsp cornstarch
- 3/4 cup flour
- 1 tsp each garlic and ginger
- Assorted veg:
- Celery, red or green bell, carrots, onions, cabbage, mushrooms, cut in chunks for stir fry.
