Spiced and Herbed Quinoa With Green Onions

In a small pot, combine the quinoa and stock (or water) and bring to a boil
- 1 cup quinoa
- 2 cups vegetable stock or water
- 1/2 cup hothouse cucumber, diced
- 1/2 cup tomato, diced
- 2 tablespoons red onion, diced
- 2 green onions, thinly sliced
- 2 tablespoons chopped cilantro
- 1 teaspoon chopped jalapeño
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice
Mandarin Couscous Salad

Place water in a saucepan; bring to a boil
- 1 1/3 c. water
- 1 c. uncooked couscous
- 1 can (11 oz.) mandarin oranges, drained
- 1 c. frozen peas, thawed
- 1/2 c. slivered almonds, toasted
- 1/3 c. chopped red onion
- 3 T cider or white vinegar
- 2 T. olive or canola oil
- 1 T. sugar
- 1/4 t. salt
- 1/4 t. hot pepper sauce
Best Chocolate Peanut Butter No Bake Cookies

In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk
- 2 cups sugar
- 4 tablespoons cocoa
- 1 stick butter
- 1/2 cup milk
- 1 cup peanut butter
- 1 tablespoon vanilla
- 3 cups oatmeal
Taco Pie

In large fry pan, brown ground beef; drain
- 1 to 1 ¼ lbs. ground beef
- 1 package (1 ¼ oz.) taco or chili seasoning mix
- ½ c. water
- ½ c. sliced olives
- 1 can ( 8 oz.) crescent rolls
- 1 ½ to 2 c. crushed corn chips
- 1 c. (8oz. or ½ pt.) dairy sour cream
- 6 slices cheese or 1 c. (4 oz.) shredded cheese
Vegetable Couscous

In a large skillet, sauté the carrots, celery, onion and peppers in oil for 5-6 minutes or until crisp-tender
- 2 medium carrots
- 1/2 c. diced celery
- 1 med. onion, diced
- 1/4 c. julienned sweet yellow pepper
- 1/4 c. julienned sweet red pepper
- 2 T. olive oil
- 1 medium zucchini, diced
- 1/4 c. minced fresh basil
- 1/4 t. garlic salt
- 1/8 t. pepper
- Dash hot pepper sauce
- 1 c. uncooked couscous
- 1 1/2 c. chicken broth
Dijon Herb Potatoes

Preheat over 350. Coat baking sheets with oil
- 1 T. canola oil
- 3 T. garlic herb butter
- 1 24 oz. bag potatoes, halved
- zest/juice of one lemon
- 1/4 c. dijon mustard
- 2 T. grated parmesan
- 1/4 t. kosher salt
- 1/4 t. pepper
- 3 T. fresh parsley, finely chopped
Granola Bars

This batch makes just over 4 dozen granola bars, depending on how big you slice them
- 1 lb oats
- 1 lb raw sunflower seeds
- 2 TB sea salt
- Juice of 2 lemons
- 2 cups blanched almond flour
- 1 cup coconut flour
- 4 cups unsweetened coconut shreds
- 1 cup melted coconut oil or butter
- 1 cup natural unsweetened peanut butter
- 1/2 cup molasses
- 1 TB vanilla or almond extract
- 2 TB cinnamon
- 2 cups raisins
Icebox Pickles

Combine all ingredients in a glass jar or crock
- 6 cups sliced, unpeeled cucumbers
- 1 cup sliced red onion
- 1 cup sliced green bell pepper
- 1 Tablespoon celery seed
- 1 Tablespoon salt
- 2 cups white sugar
- 1 cup white vinegar
Lightened-Up Ham Loaf

- 1 # cooked ham pieces
- 8 oz. Lean ground turkey breast
- 1 onion, finely chopped
- 1/2 c. plain, dried bread crumbs
- 1/2 c. unsweetened applesauce
- 2 large eggs
- 1 T. Dijon mustard
- 1/2 t. pepper
- 1/4 t. allspice
- 1/4 t. nutmeg
