Easiest Pineapple Cake

Preheat oven to 350 degree F
- THERE IS NO BUTTER OR OIL IN THE CAKE, BUT SO AS NOT TO MISLEAD ANYONE, THERE IS BUTTER IN THE FROSTING
- 2 c all purpose flour
- 2 c sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp vanilla
- pinch salt
- 1 - 20 oz can of crushed pineapple ( undrained ) in it's own juice - not syrup
- 1 c chopped nuts, optional
- CREAM CHEESE FROSTING
- 1/2 c butter or 1 stick
- 1 - 8 oz cream cheese, softened
- 1 tsp vanilla
- 1 1/2 c confectioners' sugar
Best Crockpot Beef Stew

Combine beef, celery, carrots, red onion, potatoes, salt, pepper, garlic, parsley, oregano, Worcestershire sauce, b...
- 2 pounds beef stew meat, (cut into bite-sized pieces)
- 1 tsp Salt
- 1 tsp pepper
- 1 medium onion, finely chopped
- 2 celery ribs, sliced
- 2-3 cloves of garlic, minced
- 6oz can tomato paste
- 32 oz beef broth
- 2 Tablespoons Worcestershire sauce
- 2 cups baby carrots carrots
- 4-5 small red potatoes,cut into bite-sized pieces (about 3 cups)
- 1 tablespoon dried parsley
- 1 teaspoon oregano
- 1 cups frozen peas
- 1 cup frozen corn
- 1/4 cup flour
- 1/4 cup water
Oat Bran Muffins

Combine all dry ingredients in a mixing bowl
- 2 1/4 c. oat bran
- 1 T. baking powder
- 1/4 c. sugar or maple syrup
- 2 T. chopped almonds
- handful of raisins or blueberries
- 1/4 c. shredded coconut (optional)
- 1 1/4 c. milk
- one egg
- 2 large overripe bananas
Zucchini Lasagna

1 Cook zucchini until tender, drain and set aside
- 2 1/2 cups zucchini, sliced 1/4 inch thick (about 2 medium)
- 1/2 lb lean ground beef (I use 1 lb.)
- 1/4 cup onion, chopped
- 2 small tomatoes, cut up
- 1 (6 ounce) can tomato paste
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 cup water
- 1/8 teaspoon pepper
- 1 egg
- 3/4 cup low fat cottage cheese (or low fat or fat free ricotta)
- 1/2 cup mozzarella cheese, shredded (I use 8 oz. divided)
- 1 teaspoon flour
Furniture Cleaner

Combne the ingredients in a small glass jar
- Yield: 4 Tablespoons
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. fresh lemon juice
Roasted and Dried Broccoli

Spread out on baking sheet, place on top rack, and bake for about 30 minutes
- Preheat oven to 375°
- Chop a head of broccoli (do not rinse, immediately prior to preparing!)Mince 2-3 cloves of garlic
- Put broccoli, garlic, 2 tbsp. olive oil, and a few shakes of salt and pepper in a ziploc bag.
- Shake it up!!
Crescent Burgers

Preheat oven to 350* Brown and drain red onion and ground meat
- 1/2 lb Ground meat
- 1 Red Onion
- 2 cups Shredded Cheese ( I used Colby & Monterey Jack)
- 1 tsp. Worcestershire Sauce
- 1 pkt Dry Onion Soup Mix
- 1 Can of crescent rolls
- 1 tsp pepper
Skillet Goulash

Brown ground chuck with garlic pepper, until no longer pink
- 2 lbs. ground chuck
- 1 tsp. garlic pepper
- 1 14.5-oz. can Dei Fratelli Mexican Diced tomatoes
- 1 14.5-oz. can Dei Fratelli tomato sauce
- 1 1/4 cup elbow macaroni
- 9 slices Land O’Lakes American cheese
- 1 can corn (optional)
ROASTED GARLIC MUSHROOMS

Preheat the oven to 200C/400F/gas mark 6
- 16 even-sized open cup mushrooms, stalks cut level
- 3 tbsp olive or coconut oil
- 1/4 c unsalted butter, softened
- 3 cloves garlic, chopped very finely
- 2 tbsp fresh thyme, chopped
- 1 1/2 tbsp lemon juice
- salt and freshly ground black pepper to taste
- 1/4 c fresh breadcrumbs
