Shrimp Enchiladas

Preheat oven to 350 degrees
- 1 lb frozen cooked shrimp (cocktail shrimp are great for this!), defrosted
- 1 tsp cumin
- 1 tsp chili powder
- 28 oz green enchilada sauce
- 1/4 tsp salt
- 1/2 cup sour cream (reduced fat is fine)
- 1/4 tsp cayenne pepper
- 1 4-oz can diced fire roasted green chilies
- 8 oz shredded “Mexican Blend” cheese (or Monterey Jack)
- 12-14 corn tortillas
- verde salsa for serving
- fresh cilantro for serving
Chili's Queso

Add ingredients to a crock pot
- 1.5 lbs of Velveeta Cheese (cut into chunks)
- 2 cans of Hormel Chili ( No Beans)
- 1 tsp pepper

- 2/3 C sugar

Fried Chicken

- Seasoning Mix:
- 2 tsp salt
- 1 1/2 tsp pepper
- 1 tsp cayenne
- Seasoned Flour:
- 1 1/2 C flour
- 1 1/2 tsp salt
- 1 tsp pepper
- 3/4 tsp cayenne
- Egg Wash:
- 2 eggs
- 3 Tbsp evaporated milk
- 1/2 tsp salt
- 1/4 tsp cayenne
- Oil for frying
- 8 pieces of chicken

- 4 cloves garlic, minced
- 8 scallions, finely chopped
- 2 oranges, zested and juiced
- 6 tbsp orange marmalade
- 1/2 cup soy sauce
- 4 Thai chili peppers (optional but recommended)
- 1/4 tsp red pepper flakes
- 1/4 cup cornstarch
- 4 tbsp canola oil, divided
- 1 cup brown rice, cooked and fluffed with a fork
