Crawfish Etouffee - Colorado Style

Dice enough tomatoes to measure 1/2 cup
- 28 oz Italian plum tomatoes, drained
- 1/2 stick butter, unsalted
- 1/2 C onion, finely chopped
- 1/4 C celery, finely chopped
- 1/4 C green pepper, finely chopped
- 1/4 C flour
- 1 1/2 tsp garlic, minced
- 1/2 tsp cayenne
- 1/2 tsp thyme
- 1/4 tsp basil
- 1/2 C dry white wine
- Salt and pepper
- Vegetable oil
- 6 flour tortillas
- 1 # crawfish or shrimp
- Cheddar cheese and sour cream to garnish
Appetizer - Pizzatine

In a large bowl, dissolve the yeast in one cup of luke warm water with the sugar and a pinch of salt
- For the base:
- Makes 12 small pizzas-
- 200 g plain flour
- 1 packet of brewers yeast
- 1 tsp sugar, salt
- 2 cups of luke warm water (1 cup will be used with the yeast)
- Pizza Napoletana
- For the toppings:
- 1/2 kg puréed peeled tomatoes
- 250 g. mozzarella
- 5 –6 anchovy fillets
- 2 T. capers
- 3-4 pinches of oregano
Fennel Baked in Cream

Preheat the oven to 425°F (218°C)
- 1 1/2 pounds (about 2 large bulbs) fennel, stalks removed, halved lengthwise, and cut into 1/2-inch wide wedges
- 2 cups heavy cream
- 1 1/2 cups finely grated Parmigiano-Reggiano
- Kosher salt and freshly ground black pepper
- 2 to 4 tablespoons unsalted butter, cubed
Trudy's Caesar Salad

- Dressing:
- 2 heads romaine lettuce, torn and chilled
- 3/4 C Parmesan cheese
- 1/3 C fresh croutons
- 1/4 C lemon juice
- 3/4 C olive oil
- 1/2 C red wine vinegar
- 1 large anchovy filet
- 1 large clove garlic (pressed)

- 1/2 c. hot milk with 1 rounded tsp. butter melted into it

- 2 c. heavy cream

- 1 Tbsp catsup
- 1 bay leaf
- 1 Tbsp Italian seasoning
- 1 # crawfish tails
- 2 tsp lemon juice
- 3/4 tsp salt
- 1/2 tsp pepper
- 1/4 tsp Tobasco
- 2 Tbsp parsley
- 2 Tbsp bread crumbs
- French bread for dipping
