Chicken Piccata

In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil
- 2 skinless and boneless chicken breasts, butterflied and then cut in half
- Sea salt and freshly ground black pepper
- All-purpose flour, for dredging
- 6 tablespoons unsalted butter
- 5 tablespoons extra-virgin olive oil
- 1/3 cup fresh lemon juice
- 1/2 cup chicken stock
- 1/4 cup brined capers, rinsed
- 1/3 cup fresh parsley, chopped
- Directions
- Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
Mac and Cheese II

Place bread in bowl. Pour 2 Tbsp melted butter over and toss
- 8 Tbsp butter (plus more for dish)
- 6 slices good white bread, crust removed, torn in 1/4" pieces
- 5 1/2 C milk
- 1/2 C flour
- 2 tsp salt
- 1/4 tsp nutmeg
- 1/4 tsp cayenne
- 8 oz sharp white cheddar
- 8 oz Gruyere cheese
- 1 # elbow macaroni
Lobster Bisque

In heavy saucepan, saute celery and onions in butter until tender
- 1 C diced celery
- 1 small diced onion
- 1/4 C butter
- 1 sprig thyme
- 1 bay leaf
- 3-4 stems parsley
- 2 lobster tails in shells
- 1/4 C marsala wine
- 1 C white wine
- 3/4 C white rice
- 1 tsp salt
- 6 C fish or chicken stock
- 1 C cream
- pinch cayenne
White Gazpacho with Crab Salad

1. Soak the bread cubes in cold water until softened, about 5 minutes
- GAZPACHO
- 1-1/2 cup 3/4-inch Cubes Of Day-old Rustic Bread, Crust Removed
- 2/3 cups Unsalted Blacnched Whole Almonds
- 1 whole Small Fennel Bulb (about 6 Ounces) Stalks And Core Removed, Bulb Chopped, Reserve A Few Of The Frilly Fronds For Garnish
- 1/2 cup Chopped Sweet Or Yellow Onion
- 1/2 whole Seedless Cucumber, Peeled And Chopped
- Leaves From 4 Fresh Oregano Sprigs
- 1/4 cup Extra Virgin Olive Oil
- 2 Tablespoons (additional) Extra Virgin Olive Oil
- 3 Tablespoons White Wine Vinegar
- Kosher Salt And Freshly Ground Black Pepper

- 1-1/2 cup Jumbo Lump Crabmeat, Picked Over And Drained Well
- 1/2 whole Small Carrot, Peeled And Minced Finely
- 1/2 stalk Celery, Minced Finely
- 1 Tablespoon Brandy
- 1 teaspoon Store-bought Hot Sauce, Or To Taste
- 1/3 cup Mayonnaise

Celestial Herb Biscuits

This recipe was from a Central Market Cooking Class
- 2 C self-rising flour*
- 1/2 C chopped fresh herbs (parsley, cilantro, tarragon, basil, dill)
- 1 tsp sugar
- 1 C heavy cream
- if you don't have self-rising flour, measure out 2 C of all-purpose flour. Add 2 txp baking powder and 1/2 tsp salt. Stir together with a fork.
Toasted Cumin Vinaigrette

- 2 tablespoons rice wine vinegar
- 1 tablespoon honey

- Cut up the following, drizzle with olive oil and cook in 400 degree oven until slightly browned, we do not want to set off the smoke alarm:
- 2 Eggplant or 1 small Pumpkin or any other sqaush like vegatable
- 1-2 large onions
- 2-4 tomatos
