Ingredients

    T butter/oleo

  • 3

    cloves garlic, minced

  • 1

    large onion, minced

  • 1/2

    C dry white wine

  • 1

    t salt

  • 1/4

    t black pepper

  • 1/2

    C grated romano cheese

  • 1

    (10.75 oz) can chicken broth

  • 1

    # bay scallops

  • 1

    # linguine pasta

  • 1/4

    C chopped parsley

Directions

In a large skillet, melt butter over med heat & saute garlic & onion till translucent. Add wine, salt, ground pepper, & 1/4 C cheese. Add chicken broth & scallops; increase heat & boil rapidly for 7-8 minutes. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-10 minutes or till al dente; drain. Reduce heat for scallop mixture & add parsley; place sauce on top of linguine. Sprinkle w/ remaining cheese; serve. If you like a thicker sauce, you can add 1 t corn starch at the end.
