Perfect of vanilla cupcakes

Preheat oven to 400°. Line a 12 cup muffin tin with cupcake papers
- 1 1/2 sticks softened butter.
- 1 cup of sugar.
- Three large eggs.
- 1 1/2 cups self rising flour.
- 1 tablespoon warm water.
- 1 teaspoon canola extract.

- Pork
- 2 pounds pork tenderloin, cut into 12 (2-inch thick) slices (medallions)

- 1 tablespoon vegetable oil
- Apples
- 2 tablespoons butter
- 3 Granny Smith apples, unpeeled and thickly sliced
- 2 medium shallots, thinly sliced (about ½ cup)
- 1 tablespoon finely chopped fresh rosemary
- 1 1/2 teaspoons sugar
- 1/4 teaspoon salt
- Sauce
- 1/2 cup apple cider
- 1/4 cup reduced-sodium chicken broth
- 1/2 teaspoon finely chopped fresh rosemary
- 1/4 cup heavy cream
- 1/2 teaspoon salt
- Freshly ground black pepper
