- Icing:
- 1/4 c. Shortening
- 1 c. Sugar
- 1 Egg
- 1 1/2 c.ripe Bananas mashed
- 1 tsp. Vanilla
- 1 1/2 c. Flour
- 1 tsp. Baking Soda
- 1/4 tsp. Salt
- 2 T. Butter
- 1/4 c. Brown Sugar packed
- 1 T. Milk
- 1/2 c. Confectioners Sugar
Cafe au Lait Pie

Preheat the oven to 375°F
- one 9" single pie-crust, , preferably deep dish; must be at least 1 1/4" deep
- CHOCOLATE FILLING
- 8 ounces chocolate chips or chopped bittersweet chocolate
- 4 ounces heavy or whipping cream
- VANILLA FILLING
- 1/4 teaspoon salt
- 9 1/4 ounces sugar
- 1 tablespoon cornmeal
- 1 tablespoon cornstarch
- 8 ounces whipping or heavy cream
- 2 large eggs, lightly beaten
- 3 large egg yolks, whites reserved for topping
- 2 teaspoons vanilla
- ESPRESSO FILLING
- 3 large egg whites, reserved from filling
- 1/4 teaspoon cream of tartar
- 2 5/8 ounces sugar
- 1 teaspoon espresso powder
- 1 teaspoon cold water
Shrimp Pad Thai

Soak the noodles in a bowl of warm water until soft enough to separate, about 10 minutes
- 8 ounces flat Thai rice noodles
- 1/4 cup fish sauce
- 1/4 cup raw or turbinado sugar
- 1 to 2 tablespoons hot Asian chili sauce (sambal oelek or sriracha)
- 2 tablespoons fresh lime juice, plus lime wedges for garnish

- 1 pound large shrimp, butterflied with the shells on
