Crock Pot Roast

Directions: Put everything together in the crock pot
- 5 lb. boneless rump roast (pretty much any cut of meat will work)
- 1 T garlic powder
- 1/2 t seasoned salt
- 1/2 t cayenne pepper
- 1/2 t oregano
- 1 onion, chopped
- 1 envelope dry onion soup mix
- 2 cups beef broth
Alfredo pasta

Melt butter in a medium saucepan over medium low heat
- 1/2 cup butter
- 2 garlic cloves minced
- 2 cups heavy cream
- 1/8 teaspoon ground black pepper
- pinch of salt
- 1/2 cup grated Parmesan cheese
- 12 ounces fettuccine pasta
Peach Cupcakes with Brown Sugar Frosting

Cupcakes: Preheat the oven to 350°F
- Cupcakes:
- 3 cups cake flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- Pinch of nutmeg
- 3/4 cup (1 1/2 sticks or 6 ounces) unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 3/4 cup dark or light brown sugar, packed
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups (12 ounces) buttermilk, sour cream or full-fat yogurt
- 3 large peaches, peeled, cored, and chopped smallish (I went for a 1/3-inch dice)
- Frosting:
- 1 1/4 cups light brown sugar
- 1/4 cup cornstarch
- 1/2 cup powdered sugar
- 2 8-ounce packages of cream cheese, at room temperature
- 1/2 cup (4 ounces or 8 tablespoons) unsalted butter, at room temperature
- 1/2 teaspoon vanilla extract
White Bean and Tuna Salad

Some items that you will almost always find well stocked in our pantry are canned beans (white beans, garbanzo, kid...
- 1 * 1 cup of chopped red onions or shallots
- * The zest and juice of 1 lemon or 2 limes (can sub a tablespoon or two of cider vinegar)
- 2 * 2 five to six ounce cans of tuna packed in olive oil
- 2 * 2 15-ounce cans of cannellini or Great Northern white beans, rinsed and drained
- 1/2 * 1/2 cup of chopped mint, parsley, or arugula
- * A few splashes of Tabasco sauce, or 1 minced Serrano chile or 1 teaspoon red chile flakes
- 1/2 * 1/2 teaspoon freshly ground black pepper
- * Salt and olive oil to taste
Fruit Muffins

Cream butter and sugar together
- 3/4 cup sugar
- 1 stick butter softened
- 2 eggs
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 2 cups sifted flour
- 1/2 cup milk
- 2 to 2 1/2 cups fruit
Cabbage, Peas, Bacon, and Noodles

Cook bacon till crisp, set aside, drain all but 1/2 tablespoon of fat
- 1-1 1/2 lb cabbage, shredded (about 1/2 head)
- 16 ounces egg noodles, cooked
- according to directions on package
- 4 slices bacon, chopped
- 2 large onions, diced
- salt
- fresh cracked black pepper, lots and
- lots and I mean LOTS
- 1/4 cup salted butter
- 4 tablespoons olive oil
- 1-2 cups green peas, frozen

- 1 cup butter
- 1 1/3 cup sugar
- 2 large egg yolks
- 1/4 cup of milk
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 2/3 cup cocoa
- 1/2 teaspoon salt
- powdered sugar

- 2 cups green beans cleaned
- 2 cups of rice wine vinegar
- 2 cups of water
- 1/2 cup sugar
- 10 to 12 garlic cloves
- 2 tablespoons dill seasoning
- 2 to 3 jalapenos chopped
