Cookie Dough Cheesecake Bars

For crust: Preheat oven to 325°
- Crust:
- Ingredients
- 1 1/2 cups graham cracker crumbs
- 5 T. butter, melted
- 2/3 cup mini semi-sweet chocolate chips
- Cookie Dough:
- 5 tablespoons butter~room temperature
- 1/3 cup packed light brown sugar
- 3 T. granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3/4 cup AP flour
- 1 cup semisweet chocolate chips
- Cheesecake Filling:
- 10 oz. cream cheese, at room temperature
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Topping:
- 1/3 cup semi sweet chips
- 1/2 T. butter
Broccoli, Red Pepper, and Cheddar Chowder

Discard tough lower third of broccoli stem
- 1 small head Broccoli (1/2 lb)
- 1 large boiling Potato (1/2 lb)
- 1 large Onion, chopped
- 1 red Bell Pepper, cut into 1/2-inch pieces
- 1 large Garlic clove, finely chopped
- 2 tbl unsalted Butter
- 1 tsp ground Cumin
- 1 tsp Salt
- 1/4 tsp black Pepper
- 1/2 tsp dry Mustard
- 2 tbl all-purpose Flour
- 3/4 cup Heavy Cream
- 6 oz Sharp Cheddar, coarsely grated (1 1/2 cups)

Cook flour and milk together until thick and stirring constantly let cool
- 5 tablespoons flour
- 1 cup milk
- 1 cup sugar
- 1 cup butter
- 1 teaspoon vanilla

Preheat the oven to 325F. Lightly grease (or line with parchment) two baking sheets
- 1 cup (2 sticks, 8 ounces) unsalted butter
- 1 cup (7 1/2 ounces) dark brown sugar
- 1/2 cup (3 1/2 ounces) granulated sugar
- 1/4 cup (2 3/4 ounces) dark corn syrup
- 3/4 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 cups (19 ounces) creamy peanut butter
- 2 cups (8 1/2 ounces)All-Purpose Flour
Broccoli, Cheese, and Rice Casserole

Preheat oven to 350°. Combine all ingredients in a large bowl, and spoon into a 2-quart casserole
- 1 cup uncooked instant rice
- 1/2 cup chopped onion
- 1/4 cup fat-free milk
- 4 ounces light processed cheese, cubed (such as Velveeta Light)
- 2 tablespoons butter or stick margarine, softened
- 2 (10-ounce) packages frozen chopped broccoli, thawed and drained
- 1 (10 3/4-ounce) can condensed reduced-fat, reduced-sodium cream of mushroom soup, undiluted
Quick and Easy Crawfish Etouffee

- 1 package Louisiana Crawfish tails
- 1/2 cup onions, finely chopped
- 1/2 cup bell peppers, finely chopped
- 3 Tbs. butter
- 1 can Rotel tomatoes
- 1 tsp. Black pepper (or to taste)
- Salt
- 2 tsp. garlic powder
- 1 tsp. cayenne pepper (or to taste)
