For the Crust: Blend flour, sugar and salt in a food processor
- 2 1/2 cups all-purpose flour

- 1/3 cup chilled vegetable shortening, diced
- 6 tablespoons ice water
- 1/2 cup sugar
- 1/4 cup golden brown sugar
- 3 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 2 teaspoons grated lemon peel
- 1 1/2 teaspoons ground cinnamon
- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- 3 1/2 lbs granny smith apples, peeled, cored, sliced into 1/4-inch thick slices
- 1 tablespoon milk
- 1 teaspoon sugar
Crunchy bacon coleslaw

- 1 tablespoon sugar
- 1 1/2 teaspoon cider vinegar
- 4 cup shredded green cabbage

- 1 1/2 to 2 ounces ice water
- FILLING
- 4 to 5 large ripe peaches, peeled and sliced; or 2 pounds frozen sliced peaches, partially thawed (about 5 to 6 cups)
- 3 1/2 ounces sugar
- 2 tablespoons Instant ClearJel
- 1/2 teaspoon ascorbic acid; optional, for added flavor and to preserve color
- 1/8 teaspoon nutmeg
