Basic cheesecake

To make crust: Mix crust ingredients together and press into 9 inch spring form pan
- Crust:
- 1 3/4 cup Graham crumbs
- 3/4 cup melted butter
- 1/2 cup sugar
- Filling:
- 6 large eggs
- 1 cup sugar
- 1 teaspoon vanilla
- 2 3/4 cups cream cheese softened
- 2 ounces brandy
- 3 ounces of dark cream de cocoa
- Topping:
- 2 cups sour cream
- 1/3 cup sugar
- 1 teaspoon vanilla
Nut butter

Finely grained all ingredients in a food processor and blend until smooth paste
- 1 cup roasted nut meats
- 2 teaspoons vegetable oil
- pinch of salt
Blueberry Bakery Muffins

These muffins are tender and light, but sturdy enough to hold copious amounts of fruit and other add-ins
- For the Muffins:
- 1 lb. (3-1/2 cups) unbleached all-purpose flour
- 4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. table salt
- 1-1/3 cups granulated sugar
- 5 oz. (10 Tbs.) unsalted butter, melted and cooled slightly
- 1 cup whole milk, at room temperature
- 1 cup crème fraîche or sour cream, at room temperature
- 2 large eggs, at room temperature
- 1 large egg yolk, at room temperature
- 1-1/2 cup blueberries, fresh or frozen (no need to thaw)
- 1 tsp. vanilla extract
- GLAZE
- 3 cups confectioner's sugar
- 6 Tbsp. water

1 Make the sauce by heating 2 tsp of vegetable oil in a medium saucepan over med/low heat
- 2 teaspoons vegetable oil
- 1/2 teaspoon ginger, minced
- 1 tablespoon garlic, chopped
- 1/2 cup soy sauce
- 1/2 cup water
- 3/4 cup dark brown sugar
- vegetable oil, for frying (about 1 cup)
- 1 lb flank steak
- 1/4 cup cornstarch
- 2 large green onions
Lemon Pudding

Preheat oven to 350 degrees F
- 2 cups sugar
- 1/2 teaspoon salt
- 6 tablespoons flour
- 2 cups half-and-half
- 4 egg yolks
- 2 lemons, juiced, grated zest
- 4 egg whites, stiffly beaten
Chicken and rice soup

Place the chicken in small pot and add enough water to just barely cover, 2 1/2 to 3 cups
- 1 pound skinless boneless chicken breasts
- to onions, one quartered in one chopped
- one bay leaf
- 1 tablespoon butter
- 1/3 cup orzo pasta
- 3/4 cup long grain white rice
- 32 ounce chicken stock
- 1 tablespoon extra virgin olive oil
- two ribs celery chopped and a quarter inch pieces
- 1 ^ peeled and chopped and a quarter inch pieces
- salt and pepper
- small handful fresh dill finely chopped
- small handful of fresh parsley finely chopped

Preheat oven to 350°. 2 Stir brown sugar and butter in a saucepan until butter melts and sugar dissolves
- 1/4 cup real butter
- 1 cup light brown sugar, firmly packed
- 4 tablespoons flour (fresh)
- 2 cups whole milk
- 3 large egg yolks, separate eggs (reserve whites for meringue topping)
- 1/2 teaspoon pure vanilla extract
- 1 pinch salt
- 1 (9 inch) pie crusts, prepared (baked and cooled)

- 1/2 cup granulated sugar
- 1/2 tsp. table salt
- 9-1/2 oz. (2 cups plus 2 Tbs.) unbleached all-purpose flour
- 1/2 cup unsalted peanuts, finely chopped
- For the peanut butter filling:
- 1 cup creamy peanut butter (not natural but an emulsified variety such as Jif)
- 3 oz. (6 Tbs.) unsalted butter, at room temperature
- 6 oz. (1-1/2 cups) confectioners’ sugar
- 1 tsp. pure vanilla extract
- For the ganache:
- 5 oz. good-quality bittersweet chocolate, such as Lindt Excellence, chopped (about 1 heaping cup)
- 1/2 cup plus 2 Tbs. heavy cream
