- Crust:
- 24 Oreo's
- 4 Tbsp. unsalted butter, melted
- Filling:
- 3 cream cheese at room temp.
- 3/4 c. sugar
- 3 eggs at room temp
- 2 tsp. vanilla
- 1 tsp. lemon juice
- 1 Tbsp. cornstarch
- 3 regular size Snicker's Bars, cut into 1/4" slices
- 1/4 c. caramel sauce (optional)
- 1/4 c. chopped roasted and salted peanuts (optional)
Creamy Broccli Au Gratin Soup

Cook onion in butter in large saucepan till tender
- 2 T margarine
- ½ cup chopped onion
- 1 ¾ water
- 1 pkg (4. 5 oz) Uncle Ben’s Broccoli rice au gratin
- ¼ cup flour
- ¼ tsp dry mustard
- 1 ¾ cups chicken broth or bouillon
- 2 cups milk
- ½ cups American cheese, shredded
- 1 green onion cut into short, thin strips

- 1 can Garbanzo Beans (Chickpeas) , drained and rinsed
- 1 small red onion, thinly sliced
- 5 stalks celery, cut into bite-sized pieces

- 1/4 cup cilantro, chopped
- 1 or 2 cloves of garlic, minced

Peach Cookies

Heat oven to 350 degrees. Sift dry ingredients together except pudding mix and jello mix; set aside
- Icing:
- 1 stick butter
- 1/4 c. veg oil
- 2 Tbsp. sugar
- 3 oz. peach jello mix
- 1/4 c. water
- 1 egg
- 1 tsp. vanilla
- 2 small boxes french vanilla pudding mix
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 c. flour
- 2 Tbsp. peaches, diced (use canned...needs more than 2 Tbsp.)
- extra sugar for rolling dough in
- 1 c. powdered sugar
- 1 Tbsp. light corn syrup
- 2 Tbsp. milk
- 1/4 tsp. vanilla
Mango Mousse

- 1 egg, beaten
- 1 Tbsp. oil
- 2 cans (14 oz. each) reduced sodium beef broth
- 1 can (14-1/2 oz.) stewed tomatoes, undrained
- 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
- SERVE with additional saltines.
