Green Beans with Sauteed Mushrooms

- 2 thinly sliced cloves garlic
- 1 1/4 pounds button mushrooms, trimmed and sliced

- 2 tablespoons water
- 1 to 2 tablespoons sherry vinegar
- 1/4 cup chopped fresh parsley

Quick Tuna Burgers

Turn a couple cans of tuna into a zesty tuna burger with this quick recipe
- 2 can(s) (5- to 6-ounce) chunk light tuna (see Note), drained
- 1/2 cup(s) coarse dry whole-wheat breadcrumbs (see Tip)
- 1/2 cup(s) low-fat mayonnaise, divided
- 1 jar(s) (4-ounce) chopped pimientos, drained, or 1/3 cup chopped roasted red peppers, divided

Potato Dumplings

- 6 medium-size potatoes, boiled in their skins
- 2 eggs, lightly beaten
- 2/3 cup sifted flour
- 2 teaspoons salt
- 1/4 teaspoon white pepper
- 1/2 teaspoon nutmeg (optional)
Bacon and Cheddar Deviled Eggs

When cooking hard boiled eggs, cover with cold water 1 inch above eggs
- ◾12 eggs, hard boiled and peeled
- ◾1/2 cup (4 oz) cream cheese, softened or room temperature
- ◾1/4 cup mayo
- ◾1 Tbsp milk
- ◾4 tsp (1 Tbsp plus 1 teaspoon) yellow mustard
- ◾1 tsp apple cider vinegar
- ◾1/8 tsp salt
- ◾1/8 tsp pepper, preferably white pepper
- ◾4 slices bacon, cooked and crumbled (you can use store-bought, real bacon bits if time is short)
- paprika (traditionally added for garnish, but the bacon adds nice color, so you don’t really need it)
- ◾2 tablespoons finely shredded Cheddar cheese

- 1 package yellow cake mix
- 1 package lemon jello
- 4 eggs
- 1 cup oil
- 3/4 C water
- Glaze:
- 1/4 C lemon juice
- 1 C powdered sugar
Chicken Piccata

- 2 split (1 whole) boneless, skinless chicken breasts
- Kosher salt and freshly ground black pepper
- 1/2 cup all-purpose flour
- 1 extra-large egg
- 1/2 tablespoon water
- 3/4 cup seasoned dry bread crumbs
- Good olive oil
- 3 tablespoons unsalted butter, room temperature, divided
- 1/3 cup freshly squeezed lemon juice (2 lemons), lemon halves reserved
