Cauliflower Soup

Cauliflower, of course, has a very distinctive flavor to it
- 1 head cauliflower (about 2#)
- 8 T unsalted butter cut into 8 pieces
- 1 leek, white and light green parts only, halved lengthwise, sliced thin, and washed thoroughly
- 1 small onion, halved and sliced thin
- 2 cloves garlic, minced
- salt and pepper
- 1 bay leaf
- 1 tsp. dried thyme
- 5 C water
- 1 tsp. sherry vinegar
- 3 T. minced fresh chives

Preheat the oven to 375 degrees F
- 3/4 cup buttermilk, plus more for brushing
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour, plus more for dusting
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon grated orange zest
- 1/4 teaspoon freshly grated nutmeg
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt, plus a pinch
- 12 tablespoons (1 1/2 sticks) unsalted butter, cut into small pieces and chilled

- 2 cups uncooked instant rice
- 1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
- 1 small red bell pepper, chopped (1/2 cup)

- 4 salmon fillets (6 oz each), skin removed

- 1/2 cup bacon, diced
- 1/4 cup onions, diced
- Freshly ground black pepper
- 2 1/2 cups water
- 1 1/2 cups milk

- 1 1/2 cups quick grits
- 6 ounces American cheese
- 1/4 cup scallions
Chicken Saute with olives

Heat oil in large skillet over medium-high heat until hot
- 1 T olive oil
- 4 boneless, skinless chicken half breasts
- 1/4 C orange juice
- 2 T white wine vinegar
- 2 T sliced green olives
- 2 T fresh chopped parsley
- 2 T sliced almonds
- 1 Clove garlic, minced
- 1 T slice black olives
- 1 large green bell pepper (red or yellow can be used instead of the green if desired)
- 1 tomato, diced
- 3 C hot cooked rice

- 1 large head cauliflower, broken into florets
- 2 cups chicken broth
- 2 tablespoons reduced-sodium chicken bouillon granules
- 2 cups half-and-half cream
- 2 cups 2% milk
- 1 medium carrot, shredded
- 2 Spice Islands® Bay Leaves
- 1/4 teaspoon garlic powder
- 1/2 cup mashed potato flakes
- 2 cups (8 ounces) shredded cheddar cheese
