Chili Con Carne

Pat the meat dry with a paper towel and season with the salt and pepper
- 2 1/2 pounds beef stew meat or beef chuck, cut into 1-inch cubes
- 2 1/2 pounds pork stew meat or shoulder, cut into 1- inch cubes
- 1 tablespoon kosher salt
- Freshly ground black pepper
- 1/3 to 1/2 cup corn oil
- 2 large Spanish onions, chopped
- 10 large cloves garlic, minced
- 1/3 cup chili powder, plus 2 tablespoons
- 1 tablespoon ground cumin
- 2 teaspoons dried oregano
- 1 (15-ounce) can diced tomatoes
- 5 cups low-sodium chicken broth
- 2 (15 1/2-ounce) cans pinto beans, drained and rinsed
- Serving suggestions: White rice, chopped cilantro, shredded Cheddar, chopped tomatoes, minced fresh or pickled jalapeno peppers
Stuffed Mussels

Steam the mussels in a large, covered saucepan until they open, then drain
- 2 - 3 lb. large mussels, cleaned, about 48 mussels
- 1 1/3 C bread crumbs
- 1/2 C walnut pieces
- 1 3/4 sticks butter
- 9 garlic cloves, chopped
- juice of 1 lemon
- 2 T. grated parmesan cheese
- 2 T. chopped tarragon
- small handful of parsley, chopped
Chicken Stew with Biscuits

- 3 whole (6 split) chicken breasts, bone in, skin on
- 3 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 5 cups chicken stock, preferably homemade
- 2 chicken bouillon cubes
- 12 tablespoons (1 1/2 sticks) unsalted butter
- 2 cups chopped yellow onions (2 onions)
- 3/4 cup flour
- 1/4 cup heavy cream
- 2 cups medium-diced carrots (4 carrots), blanched for 2 minutes
- 1 10-ounce package frozen peas (2 cups)
- 1 1/2 cups frozen small whole onions
- 1/2 cup minced fresh parsley
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon kosher salt
- 1 teaspoon sugar
- 1/4 pound (1 stick) cold unsalted butter, diced
- 3/4 cup half-and-half
- 1/2 cup chopped fresh parsley
