Chocolate Streusel Coffee Cake

Heat oven to 350 degrees (or 325 for dark or nonstick pan)
- Coffee Cake:
- 1 1/2 c. all-purpose flour
- 3/4 c. sugar
- 1 tsp. ground cinnamon
- 3/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. cold butter, cut into pieces
- 2 2/3 c. buttermilk
- 1 egg
- 1 tsp. vanilla
- Streusel:
- 1/4 c. flour
- 1/4 c. packed brown sugar
- 1 Tb. unsweetened baking cocoa
- 2 Tb. butter, softened
- 1/4 c. miniature semisweet chocolate chips
Cornbread Waffles with Apple-Cinnamon Syrup

In a medium microwavable bowl, mix pie filling and maple syrup
- Apple-Cinnamon:
- 1 c. cinnamon and spice apple pie filling with more fruit
- 1 c. maple-flavored syrup
- Waffles:
- 1 1/2 c. Original Bisquick mix
- 1/2 c. cornmeal
- 1 tsp. ground cinnamon
- 1 1/3 c. skim milk
- 2 Tb. canola oil
- 1 egg
Danish Envelopes

This is the easiest Danish shape to form
- For the Filling:
- 1 recipe Danish Dough
- 3/4 lb. cream cheese
- 1/2 c. sugar
- 1 large egg
- 1 tsp. vanilla extract
- For the Egg Wash:
- 1 large egg plus 1 large egg yolk
Limeade with Lime Ice Cubes

For Limeade: Bring 1/2 c. water to a boil in a medium saucepan
- Lime Ice Cubes:
- Fill one pint carafes with Limeade and Very Refreshing Iced Tea and place in a large clear glass bowl filled with ice.
- 1-1 1/2 c. sugar
- 1 Tb. lime zest, (about 2 limes)
- 1 1/2 c. fresh lime juice, (about 13 limes)
- 7 c. ice water
- 2 medium limes
- 1 qt. cold water
- 1/4 c. fresh lime juice
- 3 ice cube trays
Caramel-Chocolate Layered Fudge

For caramel fudge, grease sides of a large stockpot
- Caramel Fudge:
- 2 c. sugar
- 1/2 c. evaporated milk
- 5 Tb. light corn syrup
- 3 Tb. butter
- 1 Tb. honey
- 1/4 tsp. salt
- 1 tsp. vanilla extract
- Chocolate Fudge:
- 4 c. sugar
- 1 c. evaporated milk
- 1/3 c. light corn syrup
- 6 Tb. butter
- 2 Tb. honey
- 1/2 tsp. salt
- 1 tsp. vanilla extract
- 1 1/2 c. semisweet chocolate chips
- 1 c. finely chopped walnuts
Chicken Enchilada Soup

Saute onion and garlic in oil in a Dutch oven
- 2 Tb. vegetable oil
- 1 small onion, chopped
- 1 clove garlic , crushed
- 1 can (4 oz.) chopped green chilies
- 1 can (14 1/2 oz.) beef broth, undiluted
- 1 can (10 3/4 oz.) chicken broth
- 1 can cream of chicken soup, undiluted
- 1 can (6 3/4 oz.) chunk-style chicken, or 2 c. cooked, chopped chicken
- 1 1/2 c. water
- 1 Tb. steak sauce
- 2 tsp. Worcestershire sauce
- 1 tsp. ground cumin
- 2 tsp. chili powder
- 1/8 tsp. pepper
- 1 (16 oz.) pkg. Velveeta cheese, cubed
- 6 corn tortillas
Cranberry Roll-Ups

Combine all ingredients except tortillas together; blend until smooth
- 8-oz. container whipped cream cheese
- 8-oz. pkg. crumbled feta cheese
- 6-oz. pkg. sweetened dried cranberries
- 4-5 green onions, sliced
- 4 10" flour tortillas
A Fantastic Margarita

Directions: 1. Salt the rims of 2 large margarita glasses
- 2 cups limeade prepared from concentrate
- 1/2 cup pineapple juice
- 1/2 cup orange juice
- 2 fluid ounces tequila
- 1 fluid ounce orange liqueur
Chicken Enchiladas

Preheat 250 degrees. Spray 2 (13x9) baking dishes with cooking spray
- Toppings:
- 4 large chicken breasts, shredded
- 1 (8 oz.) cream cheese, room temperature
- 1 can cream of mushroom soup
- 2 (4 oz.) diced green chilies, with juice
- 6 green onions, chopped
- 24 small flour tortillas
- 2 (10 oz.) green enchilada sauce
- 2 c. grated Monterey Jack cheese
- 4 c. grated cheddar
- 1 c. sour cream
- 1 c. salsa
- 1 c. shredded lettuce
- 1 c. diced tomatoes
Cornbread with Honey Butter

1. Using a food processor, blend 2 sticks butter with the lemon peel
- 2 sticks (8 oz.) softened, plus 4 Tb. unsalted butter, , melted and cooled
- 2 tsp. grated lemon peel
- 1/2 c. honey
- 2 c. yellow cornmeal
- 1 c. flour
- 1 Tb. sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1 1/2 c. buttermilk
- 1 large egg
- 1 c. frozen corn kernels, thawed
