Apple-Filled Turnovers

FOR THE TURNOVERS: Line a baking sheet with parchment paper
- c. Apple Pie Filling:
- 1 1/2 lbs. frozen puff pastry
- 1 egg
- 2 Tb. cream, or milk
- 1/4 c. applejack, or apple-flavored brandy
- 1/4 c. apple juice
- 3 Tb. canola oil, divided
- 4 c. Granny Smith apples, peeled, cored, and sliced
- 6 Tb. sugar
- 3 Tb. currants
- 1/4 tsp. orange zest
- 1/2 tsp. vanilla extract
- 1/4 tsp. cinnamon
- 1/8 tsp. nutmeg
- c. Apricot Glaze:
- 3/4 c. apricot jam
- 3/4 c. water
- 3/4 c. corn syrup
- 1/3 c. brandy
Asian Beef Tacos

1. To prepare steak, combine the first 6 ingredients in a large ziploc bag
- Steak:
- 1 Tb. sugar
- 1 1/2 tsp. minced peeled fresh ginger
- 1 1/2 tsp. Thai fish sauce
- 1/2 tsp. chili garlic sauce, (such as Lee Kum Kee)
- 1/4 tsp. freshly ground black pepper
- 2 garlic cloves, minced
- 1 lb. flank steak, trimmed
- Slaw:
- 1/4 c. fresh lime juice
- 1 Tb. sugar
- 2 Tb. rice wine vinegar
- 1 1/2 tsp. minced peeled fresh ginger
- 1 1/2 tsp. Thai fish sauce
- 1/2 tsp. chili garlic sauce
- 2 garlic clove, minced
- 3 c. packaged angel hair slaw
- 2 c. packaged matchstick-cut carrots
- 1/4 c. sliced green onions
- 1/2 c. chopped fresh cilantro
- 8 (6") fat-free flour tortillas
Chicken Chowder

In a large Dutch oven, saute onion and bell pepper in oil
- 1/2 c. chopped onion
- 1/2 c. chopped bell pepper
- 1 tsp. vegetable oil
- 1/2 can (10 oz.) diced tomatoes with green chilies
- 1 (32 oz.) pkg. frozen cubed hash browns
- 1/2 tsp. seasoned salt
- 1/2 tsp. garlic salt
- 1/2 tsp. black pepper
- 1 (16 oz.) pkg. Velveeta cheese, cubed
- 2 c. cooked and cubed chicken
- 2 cans (10 3/4 oz.) cream of chicken soup

- 2 tsp. fresh lime juice
- 1 Tb. minced fresh cilantro
- 4 lime wedges
Corn Fritters

1. Combine all ingredients except for oil and mix well
- 2 (8 1/2 oz.) pkg. Jiffy corn bread mix
- 2 eggs
- 1 c. milk
- 1/2 tsp. cayenne pepper
- 1/2 tsp. black pepper
- 2 jalapeno peppers, seeds removed, chopped
- 2 c. frozen sweet corn, thawed
- 6 green onions, chopped
- 4 garlic cloves, chopped
- 2/3 c. vegetable oil
Ginger Pancake Roll-Ups

1. For the Pancakes: Mix dry ingredients, then slowly add wet; mix well into a smooth batter

- 2 c. Bisquick Biscuit mix
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. ginger
- 1 egg
- 1 1/2 c. milk
- vegetable oil for brushing pan
- 2 (8 oz.) pkg. cream cheese
- Sauce:
- 1/2 c. butter, melted
- 1 egg, well beaten
- 1 c. sugar
- zest of one lemon
- 1/4 c. water
- 3 Tb. lemon juice

In a small bowl, combine pecans, brown sugar, butter and maple extract; set aside
- 1 c. chopped pecans
- 1/4 c. packed brown sugar
- 3 Tb. butter, melted
- 1 tsp. maple extract
- 2 c. flour
- 2 tsp. sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. vegetable shortening
- 3/4 c. milk
Scrumptious Banana Pudding

- 1 can sweetened condensed milk
- 1 (6 oz.) instant vanilla pudding mix
- 2 c. milk
- 8 oz. cream cheese, softened
- 16 oz. whipped topping
- 1 (12 oz.) package vanilla wafers, (mini size are great)
- 5 bananas, sliced
Adam's Baby Back Ribs with Apricot BBQ Glaze

- 1/2 c. mustard

- 4 1 1/2 pound racks baby back ribs
- 1 c. apple juice
- 1/2 c. honey
- 1 stick butter
- 1/2 c. barbecue sauce
- 1/4 c. apricot preserves
