Dark Chocolate Brownies with Hot Fudge Sauce

1. Preheat oven to 350 degrees
- Hot Fudge Sauce:
- Tossing nuts and chocolate morsels in a small amount of flour will help evenly distribute them throughout the brownies.
- 1 1/2 c. chopped walnuts , or pecans
- 1 c. butter
- 6 oz. bittersweet chocolate
- 2 c. sugar
- 4 large eggs
- 1 Tb. vanilla extract
- 1 c. (6 oz.) semisweet chocolate morsels
- 1 c. all-purpose flour, divided
- 1/8 tsp. salt
- Garnishes: Hot Fudge Sauce, fresh cherries
- 1 (8 oz.) pkg. unsweetened chocolate baking squares
- 1/2 c. butter
- 2 c. sugar
- 1 c. milk
- 1 tsp. vanilla extract
- 1/8 tsp. salt
Black Bean and Couscous Salad

DIRECTIONS: 1. Bring chicken broth to a boil in a 2 quart or larger sauce pan and stir in the couscous
- 1 cup uncooked couscous
- 1 1/4 cups chicken broth
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon red wine vinegar
- 1/2 teaspoon ground cumin
- 8 green onions, chopped
- 1 red bell pepper, seeded and chopped
- 1/4 cup chopped fresh cilantro
- 1 cup frozen corn kernels,, thawed
- 2 (15 ounce) cans black beans,, drained
- salt and pepper to taste
Gingered Cinnamon Sugar

Position knife blade in food processor bowl; add all ingredients
- Shake well before each use. Sprinkle on cinnamon toast or French toast or over hot cereal, bananas, broiled grapefruit or baked apples or pears; stir into yogurt or sweet roll filling.
- 1 (2.7 oz.) jar crystallized ginger
- 1 c. sugar
- 1 c. packed brown sugar
- 5 tsp. ground cinnamon
Praline Brownies

Prepare brownie mix according to package directions; spoon batter into a 13x9x2" pan
- 1 (21.5 oz.) pkg. fudge brownie mix
- 3/4 c. firmly packed brown sugar
- 3/4 c. chopped pecans
- 3 Tb. butter, melted
Caramel-Filled Brownies

Preheat the oven to 350 degrees
- 1 1/2 c. pecans
- 1 c. (2 sticks0 unsalted butter
- 12 oz. bittersweet chocolate, coarsely chopped
- 1 1/2 c. sugar
- 4 large eggs
- 1 Tb. vanilla extract
- 1 1/4 c. flour
- 1/2 tsp. salt
- 14 oz. caramel candies, unwrapped
- 1/3 c. heavy whipping cream
- 1 c. semisweet chocolate chips
Chicken Enchiladas

Wrap tortilas in foil. Heat in 350 degree oven for 10 minutes to soften
- 12 flour tortillas
- 2 c. chopped cooked chicken
- 1 (4 oz.) can chopped green chilies
- 12 oz. Monterey Jack cheese, shredded
- 2 Tb. butter
- 1 Tb. flour
- 1 1/4 c. chicken broth
- 1 c. sour cream
Chicken with Grilled Peaches and Arugula

1. Heat grill to medium-high heat
- 4 (6 oz.) boneless, skinless chicken breasts
- 2 Tb.+ 1 tsp. olive oil
- kosher salt and black pepper
- 2 medium red onions, sliced into 1/2" thick rounds
- 3 peaches, cut into wedges
- 1 bunch arugula, thick stems removed (about 4 c.)
- 2 Tb. balsamic vinegar
- 2 oz. blue cheese, broken into pieces
Chocolate Toffee Butter Cookies

1. Whisk flour, baking powder, and salt together in medium bowl
- Be sure to buy Heath Toffee Bits without chocolate. Toast the nuts in a small skillet over medium heat until golden and fragrant, 4-5 minutes.
- 2 1/3 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. table salt
- 16 Tb. (2 sticks) unsalted butter, softened but still cool
- 1 c. packed light brown sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1 c. Heath Toffee Bits, (without chocolate)
- 1 1/2 c. semisweet chocolate chips
- 1 Tb. vegetable oil
- 2/3 c. pecans, toasted and chopped fine
Cornmeal Ham Cakes

In a large bowl, combine the first six ingredients
- Pineapple Maple Syrup:
- 1/2 c. flour
- 1/2 c. cornmeal
- 2 Tb. sugar
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/8 tsp. salt
- 2 eggs, lightly beaten
- 1 c. buttermilk
- 3 Tb. butter, melted
- 1 tsp. vanilla extract
- 1 1/2 c. diced fully cooked ham
- 1 c. diced fresh pineapple
- 1/4 tsp. ground cinnamon
- 1 Tb. butter
- 1 c. maple syrup
Praline Cheesecake

- 1 c. graham cracker crumbs, (approximately 16 crackers)
- 1/4 c. chopped pecans
- 1/4 c. butter, melted
- Filling:
- 3 (8 oz.) cream cheese, softened
- 1 c. firmly packed brown sugar
- 3 large eggs
- 1 c. whipping cream
- 2 tsp. vanilla extract
- Topping:
- 1/2 c. firmly packed brown sugar
- 1/4 c. butter
- garnish: pecan halves
