Calypso Salad

1. Preheat grill to 350-400 degrees (MH) heat
- To make the salsa mixture ahead, just cover and chill up to eight hours. Let stand at room temperature before serving.
- 1 1/2 lbs. beef strip steaks
- 1 1/2 tsp. lime zest, divided
- 3 Tb. fresh lime juice, divided
- 1 (8 oz.) can pineapple tidbits, drained
- 1/2 c. peach-mango salsa, (or salsa)
- 1/3 c. diced red onion
- 1/3 c. diced green bell pepper
- 1/4 c. chopped fresh cilantro
- 1/2 tsp. salt
- 1 tsp. Jamaican jerk seasoning
- 1 head romaine lettuce
Classic Burgers

1. In a bowl, gently combine ground beef, onion, garlic, oregano, salt and pepper
- 2 lbs. ground beef chuck or sirloin, (20% fat)
- 4 Tb. minced onion
- 2 garlic cloves, minced
- 2 Tb. minced fresh oregano
- 1 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 8 slices Cheddar or Swiss cheese, opt.

1. Place a rack in the middle of the oven and preheat the oven to 350 degrees

- 1 c. yellow cornmeal
- 1 c. all-purpose flour
- 1/4 c. cake flour
- 1 c. sugar
- 2 Tb. baking powder
- 1 1/2 tsp. salt
- 4 large eggs, at room temperature
- 3/4 stick (3 oz.) unsalted butter
- 1/3 c. vegetable oil
- 1 c. milk
- 1/2 c. buttermilk

- 1/4 c. chopped green onions

- 20 Ritz crackers, rolled fine
- 4 egg whites
- 1 c. sugar
- 1 tsp. vanilla

- 1 medium-to-large yellow onion (about 8 ounces), diced (about 1 1/3 to 1 1/2 cups)
- 2 tablespoons King Arthur Unbleached All-Purpose Flour
- 3 cups (24 ounces) chicken broth
- 1 pound cauliflower florets, fresh or frozen
- 3/4 teaspoon salt
- 2 teaspoons dry mustard
- 1/4 cup (2 ounces) sherry or white wine, (optional)
- 1 1/2 cups (12 ounces) evaporated milk or light cream
- 8 ounces sharp cheddar cheese, shredded*
- *Try to use the sharpest cheddar you can find; the flavor of a mild cheddar will get lost.
