Grilled Potatoes with Herbs

These are really good with ranch dressing or fresh lemon juice drizzled on top right before serving
- 1 lb. redskin or gold potatoes, peeled and chopped
- 2 tsp. garlic, chopped
- 1 Tb. fresh parsley, chopped
- 1 Tb. fresh basil, chopped
- 2-3 tsp. kosher salt
- 1 tsp. pepper
- 2 Tb. olive oil
- 2 Tb. butter, sliced
Smooth and Spicy Pumpkin Pie

Directions 1) Mix the flour, spices, and salt in a medium-sized mixing bowl
- Crust:
- a single 9" pie crust, your favorite recipe
- Filling:
- 2 tablespoons King Arthur Unbleached All-Purpose Flour
- teaspoon Vietnamese cinnamon
- pinch (1/16 teaspoon) ground cloves
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3/4 cup brown sugar
- 1 1/2 cups canned pumpkin
- 2 tablespoons corn syrup, light or dark
- 1 1/2 cups milk or a 12-ounce can evaporated milk
- 2 large eggs, lightly beaten
Citrus Shrimp

1. In a large pot, bring water to a boil
- This dish gets better with time as the flavors marry.
- 10 c. water
- 4 lb. shrimp, peeled, tails removed
- 2 c. orange juice
- 1 1/4 c. lime juice
- 3/4 c. olive oil
- 8 garlic cloves, minced
- 2 c. fresh cilantro leaves, + 4 Tb. for garnish
- 1 c. diced watermelon
- 1 cucumber, seeds removed and diced
- 1 red onion, thinly sliced
- 2 Tb. lemon juice
- 4 tsp. salt
- 1 tsp. coarse black pepper
Creamy Apple Dessert

Preheat oven to 350 degrees
- 1 (18.25 oz.) box yellow cake mix
- 1 c. sweetened flaked coconut
- 1/2 c. butter, softened
- 2 (21 oz.) cans apple pie filling
- 1/4 c. sugar
- 1 tsp. ground cinnamon
- 1 c. sour cream
- 1 large egg
Cafe Mocha Shake

Directions: Place all ingredients in the blender and mix thoroughly until the ice cubes are completely crushed
- A high-protein version of a coffee-house iced mocha.
- 2 scoops Dutch Chocolate Formula 1 Nutritional Shake Mix
- 2 tablespoons Personalized Protein Powder, (or more)
- 1 cup plain soy milk or nonfat milk
- 1/2 medium banana
- 2 teaspoons instant-coffee crystals
- 1 dash cinnamon
- 4 ice cubes
Apricot Pillows

Mix flour, salt, baking powder and powdered sugar; add eggs, and then add milk, water and vanilla
- Crepes:
- 3/4 c. flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 2 Tb. powdered sugar
- 2 eggs, beaten
- 2/3 c. milk
- 1/3 c. water
- 1/2 tsp. vanilla
- Filling:
- 1 (8 oz.) pkg. cream cheese
- 1/4 c. butter, softened
- 1/4 c. sugar
- 1 1/2 tsp. vanilla extract
- 1 tsp. grated lemon peel
- 6 Tb. slivered almonds
- butter
- Apricot Sauce:
- 2/3 c. apricot jam
- 1/3 c. orange juice
- 2 Tb. butter
- 1 Tb. lemon juice
- 1 1/2 tsp. grated lemon peel
Barbecued Garlic

Prepare outdoor grill for cooking
- 8 whole heads garlic
- 1/4 c. (1/2 stick) butter
- 4 sprigs rosemary or oregano, or 2 tsp. dried herbs
- Use as topping for: French bread, cooked meat, vegetabes
Lemon Sorbet

Combine boiling water and sugar in a large bowl, stirring until sugar dissolves; let cool
- 3 c. boiling water
- 1 c. sugar
- 2 tsp. grated lemon rind
- 1/2 c. lemon juice
Pecan-Buttermilk Dressing Cakes

1. Preheat oven to 350 degrees
- 1 c pecan halves
- 1/2 c. finely chopped onion
- 1 1/2 tsp.-1 Tb. rubbed sage
- 1 1/2 tsp. olive oil
- 1/2 c. sweetened dried cranberries, chopped
- 2 1/4 c. all-purpose flour
- 1 tsp. salt
- 3/4 tsp. baking soda
- 1/4 tsp. pepper
- 3 large eggs
- 2 c. buttermilk
Pepper Steak

In a skillet over medium heat, brown steak strips with oil and half the garlic
- 2 lbs. round steak, sliced into 1/2" strips
- 2 Tb. olive oil
- 2 cloves garlic, pressed and divided
- 2 green peppers, cut into thin strips
- 2 onions, coarsely chopped
- 8-oz. pkg. sliced mushrooms
- 2 tsp. salt
- 1/2 tsp. pepper
- 3/4 c. red wine or beef broth
- 1/4 tsp. to 1/2 tsp. curry powder
- chicken broth, as needed
