Slow-Cooker Apple Butter

Place sliced apple and vinegar in a 4-qt
- 4 lbs. cooking apples, peeled and sliced
- 1/2 c. apple cider vinegar
- 3 c. sugar
- 1 c. packed brown sugar
- 1 tsp. ground nutmeg
Apple Turnovers

In saucepan, cook apples over medium-low heat until done
- 6 apples, peeled, thinly sliced
- 1/4 c. sugar, or more
- 1 Tb. butter
- 1/8 tsp. cinnamon
- 1/8 tsp. nutmeg
- 6 (8") flour tortillas
- Toppings: Ice cream, caramel syrup, pecans
Citrus Shrimp Tacos

- Southwest Cream Sauce:
- 2 lb. unpeeled, large raw shrimp
- 20 (12 in.) skewers
- 2 Tb. Southwest seasoning, (Emeril's)
- 3 cloves garlic, minced
- 1/3 c. lime juice
- 3 Tb. lemon juice
- 16 (8 inch) soft taco-size flour tortillas, warmed
- 1 head iceberg lettuce, finely shredded
- 1 head radicchio, finely shredded
- 1 (16 oz.) sour cream
- 1 garlic clove, minced
- 2 Tb. finely chopped red onion
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/2 tsp. ground red pepper
- 1/4 tsp. salt
- 2 Tb. chopped fresh cilantro
- 2 Tb. fres lime juice
- Grilled Corn Salsa:
- 3 ears fresh corn, husks removed
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 medium tomatoes, seeded and chopped
- 2 jalapeno peppers, seeded and minced
- 2 (15 oz.) cans black beans, rinsed and drained
- 3/4 c. chopped fresh cilantro
- 1/3 c. fresh lime juice
- 2 Tb. chopped fresh mint
- 2 avocados
- opt. tortilla chips
Creamy Banana Pumpkin Pie Pancakes

- 1/3 c. regular oats, (not instant)
- 1 Tb. dry pancake mix
- 1/3 medium banana, mashed well with a fork
- 2 Tb. pure pumpkin
- 1/3 c. fat-free liquid egg substitute
- 1 Tb. fat-free cottage cheese
- 2 no-calorie sweetener packets
- 1/2 tsp. pumpkin pie spice
- 1/4 tsp. vanilla extract

- 2 tsp. salt
- 2 pkg. active dry yeast
- 3/4 c. butter, divided
- 2 c. grated Cheddar cheese
- 1 1/2 c. milk
- 1/3 c. honey
- 3 eggs
Sour Cream Dinner Rolls

- 1 (8 oz.) sour cream
- 1/2 c. butter
- 1/2 c. sugar
- 1 1/4 tsp. salt
- 2 pkg. dry yeast
- 1/2 c. warm water , (105-115 degrees)
- 2 large eggs
- 4 c. all-purpose flour
- 2 Tb. butter, melted
Citrus Stir-fry Shrimp

Bring a medium pot filled two-thirds of the way with water to a boil
- 10 oz. raw shrimp, peeled and deveined, tails removed
- 3 c. snow peas
- 3 c. white mushrooms, quartered
- 1/2 c. canned sliced water chestnuts, drained and halved
- 1/3 c. fresh orange juice, straight from the fruit
- 1/2 tsp. cornstarch
- 2 1/2 tsp. Splenda, granulated
- 3 Tb. light soy sauce
- 2 1/2 tsp. minced garlic
- 2 Tb. chopped scallions
