Pecan-Stuffed Devilled Eggs

Cut eggs in half lengthwise and carefully remove yolks
- 6 eggs, hard boiled and peeled
- 1/4 c. mayonnaise
- 1 tsp. onion, grated
- 1/2 tsp. fresh parsley, chopped
- 1/2 tsp. dry mustard
- 1/8 tsp. salt
- 1/3 c. pecans, coarsely chopped
- Garnish: fresh parsley
Avocado Halves with Santa Fe Dressing

Combine mayonnaise, seasonings, and cilantro; chill 30 minutes
- 3 avocados, halved and peeled
- 2 Tb. mayonnaise
- 1/4 tsp. garlic powder
- 1/8 tsp. red pepper flakes
- 1/2 tsp. cumin
- 1/2 c. cilantro, finely chopped
Honey-Glazed New Potatoes

In a large saucepan or Dutch oven, cover potatoes with salted water
- 2 1/2 lbs. new potatoes, cut into quarters
- 1/2 c. butter
- 1/4 c. water
- 2 Tb. honey
- 1 tsp. salt

- 1 1/2 c. butter, softened
- 1 (8 oz.) cream cheese, softened
- 2 1/4 c. sugar

- 4 (1- inch) wide onion rings

- Glaze:
- 2 cups dark rum
- 3 star anise
- 2 cinnamon sticks
- 12 juniper berries
- 1 lemon, zested
- 2 cloves
- 1/2 bay leaf
- 1 cup molasses
- 8 extra large shrimp
Barbecued Shrimp with Spicy Rice

Preheat broiler or prepare outdoor grill for cooking
- Spicy Rice:
- 1 lb. large shrimp, peeled and deveined
- 1/3 c. prepared barbecue sauce
- 1 Tb. vegetable oil
- 1/2 c. sliced green onion
- 1/2 c. finely diced carrots
- 1/2 c. finely diced red bell pepper
- 1 jalapeno pepper, minced
- 2 c. cooked rice
- 2 Tb. finely chopped cilantro
- 1 Tb. fresh lime juice
- 1 tsp. soy sauce
- hot pepper sauce
Garlic Broiled Fillets

Preheat broiler. Place fish on a broiler pan that has been sprayed with a cooking spray
- 1 1/2 lb. scrod or orange roughy
- 2 Tb. + 2 tsp. olive oil
- 2 cloves garlic, sliced
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 2 Tb. lemon juice
Hot Buttered Rum Cheesecake with Brown Sugar-Rum Sauce

Heat oven to 350 degrees. In a small bowl, mix crust ingredients
- Crust:
- 1 1/4 c. graham cracker crumbs, (about 20 squares)
- 1/4 c. butter, melted
- Filling:
- 5 (8 oz.) pkg. cream cheese, softened
- 1 1/4 c. granulated sugar
- 1/3 c. whipping cream
- 2 Tb. rum, or 2 tsp. rum extract
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground cloves
- 1/8 tsp. ground nutmeg
- 3 eggs
- Sauce:
- 1/2 c. packed brown sugar
- 1/4 c. butter
- 1/3 c. whipping cream
- 1/4 c. rum, or 3 Tb. water + 2 tsp. rum extract
- 1/4 c. golden raisins, if desired
Mojito (skinny)

- 6 oz. diet lemon-lime soda
- 12 mint leaves
- 1/4 lime, cut into slices
- 1 1/2 oz. rum
- 5-8 ice cubes
- opt. additional mint leaves and lime wedges , (for garnish)

- 3 Tb. white wine Worcestershire sauce
- 1 tsp. salt
- 1 tsp. chili powder

- 1/8 tsp. ground red pepper
- 1/8 tsp. ground black pepper
