Grease a 2 1/2-qt. oven-safe casserole or souffle dish
- 1 large loaf challah bread
- 8 large egg yolks
- 4 c. heavy cream, or half and half
- 3/4 c. + 4 Tb. sugar
- 1/4 tsp. salt
- 1/4 tsp. vanilla
- 2 Tb. unsalted butter, melted
Garlic Chicken with Orzo Noodles

DIRECTIONS: 1. Bring a large pot of lightly salted water to a boil
- 1 cup uncooked orzo pasta
- 2 tablespoons olive oil
- 2 cloves garlic
- 1/4 teaspoon crushed red pepper
- 2 skinless, boneless chicken breast halves, cut into bite- size pieces
- salt to taste
- 1 tablespoon chopped fresh parsley
- 2 cups fresh spinach leaves
- grated Parmesan cheese for topping
Grilled Corn with Seasoned Butters

- For the pecan butter:
- 6 ears corn
- 1/3 cup unsalted butter, at room temperature
- 1/3 cup ground pecans
- For the lime butter:
- 1 Tbs. grated lime zest
- 1 Tbs. fresh lime juice
- For the chili butter:
- 2 Tbs. chili powder
- 1 tsp. cumin seeds
- For the Italian herb butter:
- 2 tsp. minced fresh basil
- 2 tsp. minced fresh oregano
Honey-Roasted Sweet Potatoes

- 3 large (about 2 lbs.) sweet potatoes, peeled and cut into 1" pieces
- 2 Tb. olive oil
- 2 Tb. honey
- 1 tsp. fresh lemon juice
- 1/2 tsp. salt, plus more to taste
Moroccan Braised Chicken

- 1/4 c. olive oil
- 10 chicken thighs
- 10 drumsticks
- salt to taste
- 1 3/4 tsp. tumeric
- 1 1/4 tsp. paprika
- 3/4 tsp. cayenne pepper
- 3 onions, sliced
- 9 garlic cloves, crushed
- 2 strips orange peel
- 2 strips lemon peel
- 1 1/2 cinnamon sticks
- 2 cans pitted black olives
- 3 Tb. honey
- 1 1/2 c. pitted and chopped dates
- 6 c. chicken stock
Peppercorn Beef Tenderloin

- 1 (8 oz.) container sour cream
- 2 Tb. prepared horseradish
- 3 Tb. Dijon-style mustard

- 1 Tb. green peppercorns
- 2 tsp. coarse salt

- 1/4 c. butter, softened
- 3 Tb. Dijon-style mustard
- 1 beef tenderloin, (3 lbs.), trimmed

- The Crust
- 1 3/4 cups unbleached all-purpose flour
- 2/3 cup confectioners' sugar , plus extra to decorate finished bars
- 1/4 cup cornstarch
- 3/4 teaspoon table salt
- 12 tablespoons unsalted butter (1 1/2 sticks), at very cool room temperature, cut into 1-inch pieces, plus extra for greasing pan
- Lemon Filling
- 4 large eggs , beaten lightly
- 1 1/3 cups granulated sugar
- 3 tablespoons unbleached all-purpose flour
- 2 teaspoons grated lemon zest from 2 large lemons
- 2/3 cup lemon juice from 3 to 4 large lemons, strained
- 1/3 cup whole milk

- 2/3 c. sugar
- 1/2 tsp. salt
- 1/4 c. unsweetened cocoa
- 1 c. unsalted butter, at room temperature 1 hour, cut into 16 pieces
- 1/2 c. miniature chocolate chips
