Candied Apple Pork Chops

Core and slice apples. Heat skillet, brush pork chops with cooking oil and cook until brown
- 2 medium red apples
- 4 boneless pork loin chops
- cooking oil
- 2 Tb. brown sugar
- 1/8 tsp. nutmeg
- 1/8 tsp. cinnamon
- salt and pepper, to taste
- 2 Tb. butter
- 3 Tb. pecans, chopped
Apricot-Cherry Slab Pie

- Vanilla Glaze:
- 3 1/4 c. flour
- 1 tsp. salt
- 1 c. shortening
- 1 egg yolk
- milk
- 1/2 c. sugar
- 3 Tb. cornstarch
- 3 (15 oz.) cans apricot halves, drained and cut into quarters
- 1 (14 1/2 oz.) pitted tart red cherries, drained
- 2/3 c. powdered sugar

Austin Mac n Cheese Suiza

Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente

- 1 lb. cavatappi, or other short pasta
- 1 lb. tomatillos, husked, rinsed and halved

- 2 jalapeno chilies, seeded and chopped

- 2 c. milk
- 1 c. vegetable broth

- 1 c. monterey jack cheese, shredded
- 2 c. tortilla chips, crushed, preferably flaxseed
- 1 c. pepper jack cheese, shredded

Grilled Chicken Kebabs

Don't skimp on the marinating; less than 3 hours and the chicken won't be as flavorful or tender
- Yogurt-Herb Dipping Sauce:
- 3/4 c. plain yogurt
- 3/4 c. extra-virgin olive oil
- 6 medium garlic cloves, minced
- 1 Tb. dried thyme
- 1 Tb. dried oregano
- 1 1/2 tsp. table salt
- 1 1/2 tsp. ground black pepper
- 1/4 tsp. cayenne pepper
- 6 boneless, skinless chicken breasts, cut into 1" cubes
- 3 Tb. chopped fresh basil leaves
- 5 Tb. juice from 2 lemons
- 3 red bell peppers, stemmed, seeded, and cut into 1" pieces
- 2 large red onions, quartered, use only outer 3 layers, each quarter cut into 3 even strips that are cut crosswise into 3 pieces
- 1 c. plain whole-milk yogurt
- 3 Tb. extra-virgin olive oil
- 2 Tb. juice from one lemon
- 1 Tb. minced fresh basil leaves
- 1 Tb. minced fresh mint leaves
- 1 medium garlic clove, minced
- 1/2 tsp. table salt
- 1/4 tsp. ground black pepper
- 1 cucumber, peeled,halved lengthwise, seeded, and chopped fine

1. Preheat the oven to 300 degrees
- Creme:
- 1 tsp. unsalted butter
- 1 c. slivered ripe fruit, or small berries (opt.)
- 4 eggs
- 3 egg yolks
- 1 c. heavy whipping cream
- 1 c. milk
- 2 Tb. amaretto or frangelico
- 1/3 c. sugar
- 1 tsp. pure vanilla extract
- pinch salt
- Topping:
- 1/2 c. sugar
- 1 Tb. + 1 tsp. finely grated orange zest
Grilled Corn on the Cob

1. In large pot, stir 1/2 cup salt into 4 qts
- If your corn isn't as sweet as you'd like, stir 1/2 cup sugar into the brine. Avoid soaking the corn for more than 8 hours, or it will become overly salty.
