Cafe Noche's Chicken Acapulco With Creamy Shrimp Sauce

ROAST PEPPERS: Place poblano peppers under the broiler and char on all sides
- CREAMY SHRIMP SAUCE:
- 4 large poblano peppers
- 1/4 cup onion, chopped
- 1/2 pound medium shrimp, lightly cooked; peeled, and chopped
- 1/4 cup cilantro, chopped
- 1/4 pound monterey jack cheese , shredded
- 2 (8 ozs each) chicken breasts , halved; deboned, and pounded flat
- 2 teaspoons white pepper
- salt, to taste
- 12 (6-in long) strings
- oil, for frying
- 3 shallots, diced
- 1 cup white wine
- 1/2 cup fish stock or chicken broth
- 1 pound small shrimp
- 2 cups whipping cream
- 3/4 pound butter
Barbecued Apples

- 4 small Granny Smith apples
- 1/4 c. packed dark brown sugar
- 2 Tb. raisins
- 1 tsp. grated lemon rind

TO MAKE THE CAKE: Preheat the oven to 350 degrees
- Filling:
- 4 large eggs
- 1/4 c. packed brown sugar
- 1/2 c. flour

- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground allspice
- 1/2 c. canned pure pumpkin

- 1 c. mascarpone cheese
- 1 c. powdered sugar
- 1 generous tsp. vanilla extract
- 1 / 4 tsp. ground allspice
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/8 tsp. salt
- 1/2 c. toasted pecans or walnuts, coarsely chopped
- 1/2 c. heavy whipping cream
- Caramel Sauce:
- 1 c. sugar
- 1/4 c. (1/2 stick) unsalted butter
- 3/4 c. chilled heavy whipping cream
- pinch salt
- 2 Tb. dark rum, (such as Myer's) opt.
- Garnish:
- 1 c. chilled heavy whipping cream
- 1/4 c. powdered sugar
- 1/2 c. toasted pecan or walnut halves
- 2 oz. dark chocolate, for garnish
- 2 oz. white chocolate, for garnish
Lemon Ricotta Cheesecake

DIRECTIONS In a bowl, combine wafer crumbs, butter and lemon peel
- FILLING:
- 1-1/2 cups crushed vanilla wafers, (about 45 wafers)
- 1/4 cup butter, melted
- 1 teaspoon grated lemon peel
- 2 packages (8 ounces each) cream cheese, softened
- 1 carton (15 ounces) ricotta cheese
- 1-1/4 cups sugar
- 1/4 cup cornstarch
- 4 eggs
- 2 cups half-and-half cream
- 1/3 cup lemon juice
- 3 teaspoons grated lemon peel
- 2 teaspoons vanilla extract
- Fresh mint and lemon slices, optional

- 2 eggs
- 2 c. milk, at room temperature
- 1 stick + 2 Tb. butter , melted
- 2 Tb. vanilla extract
- 1 1/2 c. sugar
- 3 1/2-4 c. chopped sourdough bread
- 1/3 c. chopped pecans
- 3/4 c. honey
- 1/4 tsp. ground cinnamon
- dash cayenne pepper
- dash salt
- 1/2 c. heavy cream

- 5 oz. light vanilla soymilk
- 1 oz. sugar-free calorie-free vanilla syrup
- 1 Tb. Coffemate Fat Free Vanilla powdered creamer, dissolved in 1 ounce warm water
- 1 tsp. intstant coffee
- 3 no-calorie sweetener packets
- 5-8 ice cubes
- 2 Tb. Fat Free Reddi-wip
Cinnamon-Sugar Crisps with Orange Creme Fraiche

- Crisps:
- 1 (17.3 oz.) pkg. puff pastry
- 1 Tb. water
- 3 Tb. unsalted butter, melted
- 12 Tb. cinnamon
- 1/2 c. sugar
- Creme Fraiche:
- 1 (8 oz.) container creme fraiche
- juice and zest of 1 orange
- 2 Tb. brown sugar
