Mocha Latte Syrup

Skillet Peach Cobbler

Four pounds frozen sliced peaches can be substituted for fresh there is no need to defrost them
- Filling:
- 4 Tb. unsalted butter
- 5 lb. peaches , peeled, pitted and cut into 1/2-inch wedges

- 2 c. strongly brewed coffee, or expresso

Cinnamon-Pecan Shortbread

1. Whisk first 6 ingredients in large bowl to blend
- 2 c. all-purpose flour
- 1/4 c. sugar
- 1/4 c. packed golden brown sugar
- 1/4 c. cornstarch
- 1 1/4 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 c. (2 sticks) unsalted butter, cut into 1/2" cubes, room temperature
- 1 large egg white, beaten to blend with 1 Tb. water (for glaze)
- 1 1/2 c. chopped toasted pecans for wedges, or 36 pecan halves for round cookies

Cream of Turkey and Rice Soup

1. Place turkey carcass in a large Dutch oven; add water to cover
- 1 turkey carcass
- 1/2 c. butter
- 1/2 c. flour
- 1 large onion, chopped
- 2 shallots, chopped
- 3 large carrots, scraped and chopped
- 3 stalks celery, sliced
- 1 c. uncooked long-grain rice
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. chopped fresh thyme, or 1/2 tsp. dried
- 1 c. whipping cream
- Garnish: fresh thyme sprigs
Pecan Pralines

Beat until creamy and pour in drops onto wax paper which has been slightly salted
- Boil together in a large pan until it will form a soft ball in cold water. Remove from fire and add:
- 2 c. sugar
- 3/4 c. milk
- 1/2 tsp. baking soda
- 1 Tb. butter
- 1 1/2 tsp. vanilla
- 2 c. pecans
Cheesy Nachos with Guacamole and Salsa

This recipe can be doubled to serve 8 to 12; however, you will need to use two baking dishes
- One -Minute Salsa
- 1/2 small jalapeño chile or 1/2 chipotle chile in adobo sauce, minced
- 1/4 small red onion , peeled and root end removed
- 1 small clove garlic , minced or pressed
- 2 tablespoons fresh cilantro leaves
- 1/4 teaspoon table salt
- pinch ground black pepper
- 2 teaspoons lime juice from 1 lime
- 2 small tomatoes (about 3/4 pound), ripe, each cored and cut into eighths, or one (14-ounce) can diced tomatoes, drained
- Fresh Guacamole
- 2 small avocados , ripe, (preferably Haas)
- 1 tablespoon minced red onion
- 1 small clove garlic , minced or pressed through garlic press
- 1/2 small jalapeño chile , minced (about 1 1/2 teaspoons)
- 2 tablespoons minced fresh cilantro leaves
- table salt
- 1 tablespoon lime juice from 1 lime
- Nachos
- 8 ounces tortilla chips
- 1 pound shredded cheddar cheese (4 cups)
- 2 large jalapeño chiles (3/4 ounce each), sliced thin (about 1/4 cup)
- 2 scallions , sliced thin
- 1/2 cup sour cream (4 ounces)
- 1 lime , cut into 6 wedges
