Cinnamon Bread

This soft white loaf features a lovely spiral of cinnamon-sugar inside
- Dough:
- 2 1/2 teaspoons active dry yeast; or 2 1/2 teaspoons instant yeast
- 7/8 to 1 1/8 cups lukewarm water*
- 3 cups King Arthur Unbleached All-Purpose Flour
- 1 1/4 teaspoons salt
- 3 tablespoons sugar
- 6 tablespoons unsalted butter, at room temperature
- 1/4 cup nonfat dry milk
- 1/2 cup instant mashed potato flakes
- *Use the lesser amount in summer (or in a humid environment), the greater amount in winter (or in a dry climate), and somewhere in between the rest of the year, or if your house is climate controlled.
- Filling:
- 1/4 cup granulated sugar
- 1 1/2 teaspoons ground cinnamon
- 2 teaspoons King Arthur Unbleached All-Purpose Flour
- 1 large egg beaten with 1 tablespoon water, to brush on dough
Cream Cheese Omelet

In a large bowl, beat eggs, cream cheese, salt and pepper using an electric mixer
- 6 eggs
- 4 oz. cream cheese, softened
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1 1/2 Tb. butter
- 6 green onions, finely chopped
Four Layer Delight

Combine flour, pecans and butter
- 1 c. flour
- 1/2 c. chopped pecans
- 1/2 c. melted butter
- 3 c. whipped topping, divided
- 1 c. powdered sugar
- 8 oz. cream cheese
- 1 large + 1 small package any flavor pudding mix
- milk
Fruit and Caramel Brie

Place Brie in a microwave-safe bowl
- 1 round (8 oz.) Brie cheese, rind removed
- 1/3 c. caramel ice cream topping
- 1/4 c. dried cranberries
- 1/4 c. chopped dried apples
- 1/4 c. chopped walnuts
- 1 loaf (1 lb.) French bread baguette, sliced and toasted
Lemon Madeleines

Preheat oven to 325 degrees
- 1 c. cake flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. unsalted butter, softened
- 3/4 c. sugar
- 2 large eggs
- 1 egg white
- 1 Tb. lemon zest
- 1/2 tsp. vanilla
- Garnish: powdered sugar
Peanut Cakes

Cake: In a mixing bowl, beat egg yolks until thick and light in color, about 5 minutes
- Cake:
- 6 egg yolks
- 1 c. sugar
- 1/2 c. boiling water
- 2 tsp. vanilla extract
- 1 Tb. frozen orange juice concentrate
- 1 3/4 c. cake flour
- 2 1/4 tsp. baking powder
- 1/2 tsp. salt
- 20 oz. salted, roastd peanuts , ground
- Butter Frosting:
- 1/2 c. butter , softened
- 4 1/2 c. sifted powdered sugar
- 1/4 c. milk
- 1/4 tsp. salt
- 1 tsp. vanilla
Shrimp and Corn Bisque

Melt butter in saucepan over medium heat
- 1/4 c. butter
- 2 onions, diced
- 2-3 cloves garlic, minced
- 1 green bell pepper, diced
- 1 1/2 lbs. small shrimp, peeled and deveined
- 1 (8 oz.) pkg. cream cheese
- 1 can tomatoes and green chilies
- 2 (14 oz.) cans cream-style corn
- 1 Tb. minced fresh basil, (or 1 tsp. dried)
- 3 c. milk
- 1 tsp. black pepper
- 1/2 tsp. red pepper, or more to taste
- salt to taste
- 1/2 bunch green onions, chopped
Butternut Squash Fries
