Banana-Nut Bread

Directions: Preheat an oven to 350�F
- 6 Tbs. (3/4 stick) unsalted butter, at room temperature
- 1 cup sugar
- 2 or 3 very ripe bananas, coarsely mashed (about 1 1?2 cups)
- 3 eggs, lightly beaten
- 1 ?2 cup buttermilk
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. freshly grated nutmeg
- 1 ?2 tsp. salt
- 3 ?4 cup coarsely chopped walnuts, pecans or hazelnuts
Cinna-Buns

Knead all of the dough ingredients in an electric mixer, using the dough hook, for 4-7 minutes at medium speed
- Dough:
- 1 c. lukewarm water
- 2 large eggs, room temperature
- 1/3 c. unsalted butter, cut up
- 4 1/2 c. all-purpose flour
- 1 3/4 tsp. salt
- 1/2 c. sugar
- 2 1/2 tsp. instant yeast
- Filling:
- 1/3 c. unsalted butter, softened
- 1 c. brown sugar, packed
- 3 Tb. ground cinnamon
- Icing:
- 1 (3 oz.) pkg. cream cheese, softened
- 1/4 c. unsalted butter, softened
- 1 1/2 c. powdered sugar
- 1/2 tsp. vanilla
Flan (Ninfa's Houston)

Caramelize sugar in heavy skillet
- 3/4 c. sugar
- 3 eggs
- 3 egg yolks
- 2 tsp. vanilla
- 1 (14 oz.) can sweetened condensed milk
- 1 3/4 c. milk
- 2 oz. cream cheese
Frozen Margarita

Icy cold and refreshing, frozen margaritas are a favorite cocktail on a hot summer day
- Simple Syrup:
- 2 fl. oz. white tequila
- 2 Tbs. triple sec
- 2 Tbs. fresh lime juice
- 1 tsp. simple syrup, (see related recipe at left)
- 1 cup ice cubes
- 1 c. water
- 1 c. sugar
Pumpkin Cranberry Bread

Preheat oven to 350 degrees
- 6 c. all-purpose flour
- 3 Tb. + 1 tsp. pumpkin pie spice
- 1 Tb. + 1 tsp. baking soda
- 1 Tb. salt
- 6 c. granulated sugar
- 1 (29 oz.) pure pumpkin
- 8 large eggs
- 2 c. vegetable oil
- 1 c. orange juice, or water
- 2 c. sweetened dried, fresh, or frozen cranberries
Lemon Cookies

1. Preheat the oven to 350 degrees
- 1 1/4 c. sugar
- 1 stick unsalted butter, chilled
- 1 Tb. lemon juice, plus grated peel of 2 lemons
- 1 large egg
- 1 1/2 c. flour
- 1/4 tsp. baking soda
- 1/4 tsp. salt
Mini Muffalettas

Spread 1 Tb. olive salad evenly over each cut side of roll bottoms
- 1 (32 oz.) jar Italian olive salad
- 12 small deli rolls, cut in half
- 12 thin Swiss cheese slices
- 12 thin deli ham slices
- 12 thin provolone cheese slices
- 12 Genoa salami slices
Crisp Thin-Crust Pizza

Makes two 14-inch pizzas. Published January 1, 2001
- 10 ounces unbleached all-purpose flour (about 2 cups), preferably Gold Medal, protein content no higher than 10.5 percent
- 1/2 teaspoon instant yeast
- 1/2 teaspoon honey
- 1/2 teaspoon table salt
- 6.2 ounces water (about 3/4 cup plus 1 1/2 teaspoons), preferably filtered or spring, 100 to 105 degrees
- 1/4 cup olive oil
- 1 cup tomato sauce (see recipe below)
- 8 ounces whole milk mozzarella (about 2 cups), shredded
- Quick Tomato Sauce
- 1 can (14 1/2 ounces) crushed tomatoes
- 1 large clove garlic , minced, or pressed through garlic press
- 1 tablespoon olive oil
Crawfish, Shrimp, and Lump Crabmeat Etouffee

Melt butter in a heavy pot over medium heat; add onions and celery and cook until softened, about 10 minutes
- 1/2 c. butter
- 2 onions, chopped
- 2 stalks celery, finely chopped
- 2 1/2 c. chicken broth
- 1/4 c. flour
- 1 lb. crawfish tails
- 3 Tb. lemon juice
- 1/2 tsp. salt
- cayenne pepper
- 2 tsp. Tabasco sauce
- 1 lb. peeled and deveined shrimp
- 1 lb. lump crabmeat
- 1/4 c. chopped green onion tops
- 1/4 c. chopped parsley
- 3 c. cooked white rice
