Lemon Cream Cheese Squares

Preheat oven to 350 degrees
- 1/3 c. butter, softened
- 1/3 c. packed brown sugar
- 1 c. flour
- 1/2 c. finely chopped pecans
- 1 (8 oz.) pkg. cream cheese, softened
- 1/2 c. sugar
- 1 large egg
- 1 tsp. grated lemon zest
- 3 Tb. lemon juice
- 2 Tb. milk
- 1/2 tsp. vanilla extract
Peach Sangria

1. Combine the chopped peaches, sugar and lemon zest and let sit for 1 hour
- 2 c. chopped peaches, (plus 1 whole peach sliced for garnish)
- 2/3 c. superfine sugar
- 2 tsp. grated lemon or orange zest
- 1/3 c. peach schnapps , or peach liqueur
- 2 (750 ml.) bottles rose, (like Spanish Rosado by Chivite)
- 203 c. sparkling water , or soda
- lavender or mint, to garnish each glass
Mini Potato Skins with Horseradish Dipping Sauce

1. Preheat oven to 375 degrees
- Horseradish Dipping Sauce:
- 12 small red potatoes, washed and dried
- 3 Tb. olive oil, divided
- 1 tsp. Creole seasoning
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1 1/2 cups shredded Cheddar and Monterey Jack cheese blend
- 8 slices bacon, cooked and crumbled
- 1/4 c. chopped green onion
- 1 c. sour cream
- 1/2 c. mayonnaise
- 2 Tb. prepared horseradish
- 1 Tb. chopped fresh chives
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
Peach Sorbet

Combine sugar, corn syrup, and 1 cup water in a small saucepan; bring to a boil, stirring constantly
- 1/2 c. sugar
- 1/4 c. light corn syrup
- 2 c. water, divided
- 1 (16 oz.) pkg. frozen peaches, thawed
- 3 Tb. lemon juice
- 1/2 c. peach nectar
- 1/8 tsp. almond extract
Bananas Foster Ice-Cream Pastry

Preheat oven to 350 degrees
- 1/2 c. chopped pecans
- 1/2 (17.3 oz.) pkg. frozen puff pastry sheets, thawed (frozen puff pastry shells may be substituted)
- 1/4 c. butter
- 1/2 c. packed brown sugar
- 1 Tb. orange juice
- 1 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- pinch salt
- 4 bananas, cut into 1/3" thick slices

- 3/4 c. butter, softened
- 3/4 c. sugar
- 3/4 c. brown sugar
- 2 large eggs
- 1 1/2 tsp. vanilla
- 2 1/4 c.+ 2 Tb. all-purpose flour
- 1 tsp. salt
- 1 1/2 (12 oz.) pkg. semisweet chocolate morsels
Cream Cheese Braid

Prepare dough from hot roll mix according to pkg
- 1 (16 oz.) pkg. hot roll mix
- 1 (8 oz.) pkg. cream cheese, softened
- 1/3 c. sugar
- 1 tsp. vanilla extract
- 1 egg yolk
- pinch salt
- 1 egg yolk, lightly beaten
- 1 c. sifted powdered sugar
- 1 Tb. milk
- 1 tsp. vanilla extract
Flatbread with Eggplant, Peppers and Olives

- For the dough:
- 1 red bell pepper
- 1 green bell pepper
- 1 eggplant
- 1 2/3 cups all-purpose flour
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1/2 Tbs. olive oil
- 1 egg yolk
- 3/4 cup water
- 1 garlic clove, crushed
- 12 black olives, pitted and coarsely chopped
- Salt and freshly ground pepper, to taste
- 2 large, ripe tomatoes, cut into thin slices
- 4 Tbs. olive oil
Guacamole-Goat Cheese Toasts

1. Cut avocados in half. Scoop pulp into a bowl, and mash with a potato masher or fork until slightly chunky

- 2 ripe avocados
- 3 Tb. finely chopped red onion, divided
- 1/2 medium jalapeno pepper, seeded and chopped
- 1 garlic clove, pressed
- 2 1/2 tsp. fresh lime juice
- 1/4 tsp. salt
- 1/4 tsp. coarsely ground pepper
- 1/2 c. crumbled goat cheese
- 1 fresh tomatillo, husk removed
- 1 (7 oz.) pkg. miniature white pita rounds, (this recipe tested with Toufayan Bakeries Mini Pitettes)
- 2 Tb. olive oil
- 1 plum tomto, seeded and finely chopped
