Shrimp Curry in Coconut-Tomato Broth

1. Combine the garlic, ginger, chiles and 2 Tb
- 2 heaping Tb. chopped garlic, (about 8 cloves)
- 1 1/2 Tb. chopped fresh ginger
- 4 red Thai chiles or 2 serrano chiles, seeded and chopped
- 3/4 c. water
- 1/4 c. peanut or vegetable oil
- 2 " stick of cinnamon, roughly crushed
- 2 bay leaves
- 2 1/2 c. minced onions
- 2-3 Tb. curry powder, preferably Sun brand
- 1/2 tsp. ground cardamom
- 1 1/2 c. minced, canned Roma tomatoes
- 2 Tb. chopped fresh cilantro
- 1 c. coconut milk
- 2 tsp. kosher salt, or to taste
- 3/4 c. plain low-fat yogurt
- 3 lbs. large shrimp, peeled and deveined, tail on
- 2 Tb. fresh lime or lemon juice
- 1 tsp. garam marsala
- cooked basmati or jasmine rice
- 1/2 c. each of 4 or more of these: shredded coconut, chopped roasted peanuts, chutney, chopped cilantro, chopped scallions, toasted pumpkin seeds,
Cherry Delight

Mix together
- 1 can cherry pie filling
- 1 lg. can crushed pineapple, drained
- 1 can sweetened condensed milk
- 1 lg. Cool Whip
- 1 c. chopped pecans
Cranberry-Cherry Relish

Combine all ingredients in a heavy non-aluminum saucepan
- 1 (16 oz.) can whole berry cranberry sauce
- 1 c. fresh or frozen pitted dark cherries
- 1/2 c. raisins
- 1/4 c. minced onion
- 1/4 c. packed brown sugar
- 2 Tb. balsamic vinegar
- 1 Tb. minced fresh ginger
Filet Mignon with Cabernet Sauce

1. Heat a large nonstick skillet over medium-high heat
- 4 (4 oz.) filet mignon steaks
- 1/2 tsp. salt, divided
- 1/2 tsp. freshly ground black pepper, divided
- 1/4 c. minced shallots
- 1 Tb. red wine vinegar
- 2 tsp. soy sauce
- 1 c. cabernet savignon, or other dry red wine
- 1 c. fat-free beef froth
- 2 tsp. butter
Frozen Hot Chocolate (skinny)

Place hot cocoa mix, chocolate syrup, and sweetener in a glass, and stir in 3 ounces of hot water
- 1 packet diet hot chocolate mix, (25 calories)
- 1/4 c. light vanilla soymilk
- 1/2 oz. sugar-free calorie-free chocolate syrup, (white chocolate or vanilla)
- 1 tsp. sugar-free chocolate syrup
- 2 no-calorie sweetener packets
- 2 Tb. Fat Free Reddi-wip
- 5-8 ice cubes
Gruyere Walnut Crisps

Grate the cheese and toss with minced herb
- 1/2 lb. Gruyere cheese, (or good Parmesan)
- 2 Tb. minced fresh tarragon, (or rosemary or thyme)
- 1/2 c. toasted, chopped walnuts, (or almonds)
Blackened Tilapia with Cilantro-Lime Slaw

Chop the garlic, sprinkle it with a pinch of salt, and mash it into a paste with the side of a chef's knife
- 1/2 small clove garlic
- kosher salt
- 1 medium lime
- 3 Tb. mayonnaise
- 1/4 medium head Savoy cabbage, cored, and thinly sliced (about 2 cups)
- 2 scallions, thinly sliced
- 2 Tb. chopped fresh cilantro leaves
- freshly ground black pepper
- 1/2 tsp. chili powder
- 1/4 tsp. ground cumin
- 2 (5 oz.) tilapia fillets, cut in half lengthwise
- 1 Tb. unsalted butter
Chili-Topped Baked Potatoes

This chili is great spooned over baked potates and topped with shredded cheese
- 1-2 lbs. ground beef, browned and drained
- 4-oz. can diced green chiles
- 10-1/2 oz. can French onion soup
- 1 Tb. chili powder
- 21-oz. can red kidney beans, drained and rinsed
- 2 tsp. ground cumin
- 6-oz. can tomato paste
- 3/4 c. water
- 1/2 tsp. pepper
- 1/8-1/4 tsp. hot pepper sauce
- 6-8 potatoes, baked
- Garnish: shredded Cheddar cheese
Filled Croissants

You can fill croissants with a variety of sweet or savory ingredients
- For the croissants: 6 triangles of frozen precut croissant dough
- 1 egg
- 2 Tbs. milk
Mimosa
