Simply Swordfish

Directions: 1. Preheat an outdoor grill for high heat, and lightly oil grate
- 2 (6 ounce) swordfish steaks
- 2 tablespoons lemon juice
- 1 tablespoon lemon pepper
- 1 tablespoon dried dill weed
Peach Ice Cream

Combine half of peaches and 1/4 cup milk in container of an electric blender; process until smooth
- 7 large peaches, peeled and sliced (about 7 cups)
- 3 c. milk, divided
- 2 large eggs, lightly beaten
- 1 (12 oz.) can evaporated milk
- 2 1/2 c. sugar
- 1 (12 oz.) can peach nectar
Cilantro Lime Rice

Combine all ingredents and toss Serves 100
- Rice
- 2 liters Cooked White Rice
- 2 Cups Cilantro
- 1/2 Cup Fresh Lime Juice
- 1/2 Cup Vegetable Oil
- 2 Tablespoons Salt
Cranberry-Apple Turnovers

For turnovers, combine apples, cranberries, sugar, walnuts, flour, cinnamon, and nutmeg in a large saucepan
- Turnover:
- 2 1/2 c peeled, cored, and chopped tart apples, (about 3 apples)
- 3/4 c. fresh cranberries
- 1 c. granulated sugar
- 1/4 c. chopped walnuts
- 2 Tb. all-purpose flour
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 2 sheets frozen puff pastry dough, thawed according to pkg. directions
- Glaze:
- 1/2 c. sifted powdered sugar
- 2 tsp. milk
Fifty Yard Line Blueberry Muffins

Mix together butter and oil, then add sugar, eggs and flour (baking soda and powder in flour)
- 1 stick butter, melted
- 1/2 cup oil (Mazola)
- 2 eggs
- 1 Tb. Butavan , (can buy at Gourmet Pantry)
- 1 can blueberries (3.5 oz), drained, but save juice
- 1 3/4 cup sugar
- 2 c. flour
- 1 c. buttermilk
- 1 Tb. baking powder
- 1 tsp. baking soda

Unblanched nuts are nuts with their skins left on
- Cookies:
- 1 1/4 c. unblanched hazelnuts, toasted and cooled
- 1 c. unblanced whole almonds, toasted and cooled
- 3/4 c. granulated sugar
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cardamom
- 1/2 tsp. ground nutmeg
- 3 Tb. grated zest from 2 oranges
- 2 Tb. grated zest from 2 lemons
- 1 1/2 c. all-purpose flour
- 2 Tb. Dutch-processed cocoa powder
- 1/2 tsp. table salt
- 6 Tb. unsalted butter, softened
- 3/4 c. packed light brown sugar
- 4 large eggs
- 1 tsp. vanilla extract
- Powdered Sugar Glaze:
- 1 3/4 c. powdered sugar
- 1/4 c. whole milk
- or Chocolate Glaze:
- 10 oz. semisweet chocolate
Microwave Pralines

In a 4-qt. microwave-safe bowl, combine sugar, pecans, buttermilk, butter, and salt
- 2 c. sugar
- 1 1/2 c. chopped pecans
- 3/4 c. buttermilk
- 2 Tb. butter
- 1/4 tsp. salt
- 1/2 tsp. baking soda
- 1 tsp. vanilla extract
- This recipe was tested in a 700-watt microwave.)
Peach Ice Milk

Mash 4 c. peaches in a large bowl
- 5 c. peeled chopped ripe fresh peaches, (about 3 lbs.), divided
- 2/3 c. sugar
- 1 Tb. lemon juice
- 2 c. 2 % low-fat milk
- 1 c. evaporated skim milk
- 1/2 c. frozen egg substitute, thawed
- 2 Tb. honey
- 1/8 tsp. almond extract
- opt. fresh mint sprigs
Banana Whoopie Pies

1. Preheat oven to 350 degrees
- 2 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. mashed banana, (from 1 ripe banana)
- 1/2 c. sour cream
- 4 oz. (1 stick) unsalted butter, softened
- 1/2 c. granulated sugar
- 1/2 c. packed light brown sugar
- 1 large egg
- 1 tsp. vanilla extract
- 16 oz. cream cheese, softened
- 1 c. powdered sugar, (plus more for dusting)
Gruyere Grits

- 1 1/2 c. uncooked regular grits
- 1 c. shredded Gruyere chesse
