Peach Cobbler

Made with fresh peaches, this homey cobbler captures the essence of summer
- Cobbler dough:
- 3 lb. peaches, peeled, pitted and each cut into 8 slices
- 1/4 cup plus 2 Tbs. plus 1 tsp. granulated sugar
- 1/4 cup plus 2 Tbs. firmly packed light brown
- sugar
- 2 1/2 Tbs. cornstarch
- 2 tsp. fresh lemon juice
- 1/4 tsp. freshly grated nutmeg
- 1 Tbs. unsalted butter, cut into small pieces
- 1 1/4 cups unbleached all-purpose flour
- 1/3 cup sugar
- 1/4 tsp. salt
- 7 Tbs. cold unsalted butter, cut into 1/4-inch cubes
- 1 egg yolk
- 1 tsp. vanilla extract
- 2 Tbs. very cold water
- 1 egg, lightly beaten
- Vanilla ice cream:
- 3 cups half-and-half
- 1 vanilla bean
- 3/4 cup sugar
- 6 egg yolks
Chocolate Chip Cookie Dough Cheesecake

1. Preheat oven to 300 degrees
- Crust:
- 2 c. packed chocolate graham cracker crumbs
- 1/3 c. sugar
- 6 Tb. butter, melted and cooled
- 1 egg white, lightly beaten
- Filling:
- 1 (16.5 oz.) roll chocolate chip cookie dough, room temperature
- 4 (8 oz.) pkg. cream cheese, softened
- 1 1/2 c. sugar
- 5 large eggs
- 3 Tb. all-purpose flour
- 1 (8 oz.) carton sour cream
- 1 tsp. vanilla extract
- Chocolate Ganache:
- 1/3 c. heavy whipping cream
- 1/4 c. sugar
- 1 Tb. light corn syrup
- 3/4 c. semisweet chocolate chips
Fettucine with Lemon, Mint and Parmesan

1. Cook pasta in salted water according to package directions
- 1 lb. dried fettucine
- coarse salt
- 3 oz. Parmigiano-Reggiano cheese, grated (1 cup), plus more for garnish
- 2 Tb. julienned lemon zest
- 1 Tb. + 1 tsp. fresh lemon juice
- 1/2 c. torn fresh mint leaves
- 1 Tb. extra-virgin olive oil
- opt. crushed red pepper flakes
Berry Delicious Lemonade

Combine first 3 ingredients in container of an electric blender; process until smooth
- 1-1 1/2 c. strawberries, sliced
- 1 c. fresh lemon juice, about 6 lemons
- 1-1 1/4 c. sugar
- 4 c. cold water
- ice cubes
- opt. 1 lemon, sliced
Frogmore Stew

1. Bring 1/4 c. Old Bay seasoning and 5 qt
- Use heads-on shrimp for added flavor, but feel free to substitute 4 lb. headless shrimp.
- 1/4 c. Old Bay seasoning
- 4 lb. small red potatoes
- 2 lb. kielbasa, or hot smoked link sausage, cut into 1 1/2" pieces
- 6 ears fresh corn, halved
- 5 lb. unpeeled, large raw shrimp, (21/25 ct.)
- Old Bay seasoning
- Cocktail sauce
Micro-Steamed Asparagus

Banana Bread Shake

Directions: Place all ingredients in the blender and mix thoroughly until the ice cubes are completely crushed
- 2 scoops French Vanilla Formula 1 Nutritional Shake Mix
- 2 tablespoons Personalized Protein Powder, (or more)
- 1 cup plain soy milk or nonfat milk
- 1/2 very ripe banana
- 1/8 teaspoon black-walnut flavoring
- A few drops vanilla extract
- 1 dash cinnamon
- 4 ice cubes

- 1 teaspoon instant yeast

- 1 1/4 teaspoons salt
- 1 teaspoon sugar
- 1 tablespoon Baker's Special Dry Milk or nonfat dry milk
- 1/4 cup lukewarm water
- 2 tablespoons olive oil
