Golden Squash Patties
By Tamipri
Combine squash and onion, sprinkle with salt and pepper and toss to combine
- 6-8 yellow squash, shredded
- 1 sweet onion, shredded
- salt and pepper to taste
- 1 c. self-rising flour
- 1 c. self-rising cornmeal
- 1 egg, beaten
- 1 c. shredded Cheddar cheese
- oil for frying
Pecan French Toast Casserole

This recipe works best when the bread is one day old
- Pecan Topping:
- 1 loaf French or Italian bread, cut into 1" slices
- 1 1/2 c. milk
- 1 1/2 c. half-and-half
- 1 tsp. vanilla
- 1/8 tsp. nutmeg
- 1 tsp. cinnamon
- 1/2 c. butter, softened
- 2 Tb. maple syrup
- 1 c. dark brown sugar, packed
- 1 c. chopped pecans
Cherry Cobbler

Drain cherries, reserving 1/2 c
- 3 (14.5 oz.) cans pitted tart red cherries
- 1 1/2 c. sugar, divided
- 3 Tb. cornstarch
- 1/2 tsp. red liquid food coloring, opt.
- 3 Tb. butter
- 1 Tb. grated lemon rind
- 1/4 tsp. almond extract
- 1 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. milk
- 1/4 c. butter, softened
- 1 tsp. vanilla extract
- 1 large egg
- ice cream
Asparagus with Jalapeno Hollandaise

Snap off tough ends of asparagus
- 1 1/2 lbs. fresh asparagus, (or two 10 oz. pkg. frozen asparagus spears)
- 1 pkg. hollandaise sauce mix, (such as Knorr)
- 2 Tb. grated Parmesan cheese
- 1 Tb. seeded and diced jalapeno pepper
- 2 tsp. diced pimiento
- Garnishes: fresh cilantro sprigs, lemon slices, red jalapeno pepper fan
Frozen Caramel Crunchcake

- 2 full-size caramel corn rice cakes
- 1/4 c. Cool Whip Free
Honey Rolls

In a large bowl, dissolve yeast in warm water
- 3 pkgs. active dry yeast
- 2 c. warm water , (110-115 degrees)
- 1/4 c. honey
- 2 Tb. canola oil
- 1 Tb. salt
- 2 eggs
- 1 egg, separated
- 7 3/4-8 1/2 c. bread flour
- 1/2 tsp. cold water
Layered Nacho Dip

Combine first 3 ingredients, stirring well, spread into a lightly greased 7x11" baking dish or 9" deep-dish pieplat...
- 2 (16 oz.) cans refried beans
- 1 (4.5 oz.) can chopped green chilies
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 1 (8 oz.) pkg. shredded Mexican Four Cheese Blend
- 1 (8 oz.) container refrigerated avocado dip
- 1 (8 oz.) carton sour cream
- 3 green onions, thinly sliced
- 2 (2 1/4 oz.) cans sliced ripe olives, drained
- 1 large tomato, chopped
Microwave Peanut Shrimp with Rice

In a medium microwave-safe bowl, combine the broccoli slaw with 1 Tb
- 1 1/2 c. broccoli slaw mixture
- 8.8 oz. microwave rice
- 12 cooked, peeled shrimp
- 8 oz. jar prepared Thai-style peanut sauce
- 1/4 c. salted peanuts
- 1/4 c. chopped fresh cilantro
- Hot pepper sesame oil, for seasoning
Blackened Sea Scallops

Combine spices and brown sugar for the scallops ina bowl
- Coat in spices; Heat and Sear:
- 1 Tb. sweet paprika
- 2 tsp. each dry mustard, brown sugar, kosher salt
- 1 tsp. each celery seed, dried thyme leaves, dried oregano leaves, pepper, white pepper, and cayenne
- 12 sea scallops
- 2 Tb. vegetable oil
