Chunky Apple Popovers with Brown Sugar-Mascarpone Cream

1. For the filling: melt butter in a medium saucepan over medium-high heat
- Filling:
- These popovers are prettiest when they first come out of the oven, so try to serve them right away. Cream cheese is a great substitute for mascarpone.
- 2 Tb. unsalted butter
- 4 medium apples, peeled, cored, and cut into 8 slices each
- 1/2 c. brown sugar
- 1 tsp. vanilla
- Popovers:
- 2 eggs
- 1 c. milk
- 1 c. flour
- 1/2 tsp. salt
- 1 tsp. sugar
- 2 Tb. unsalted butter, melted
- Cream:
- 1 c. mascarpone
- 1 1/2 Tb. brown sugar
Crab Salad with Green Apples and Grapefruit Coulis

Using a sharp knife, cut a slice from the top and bottom of the grapefruit to reveal the flesh
- 1 grapefruit
- 2 tsp. sugar
- juice of one lemon
- 2 Granny Smith apples
- 1 lb. fresh-ccoked lump crabmeat, picked over cartilage and shell fragments
- 3 Tb. extrai-virgin olive oil
- 1 1/2 Tb. white wine vinegar, or Champagne vinegar
- 3 Tb. minced fresh chives
- 1/2 tsp. fine sea salt
- 1/2 tsp. freshly ground black pepper
- pinch cayenne pepper
Fajita Steak Salad

Soak steak strips in diet coke (use a small bowl)
- 3 c. chopped romaine lettuce
- 3 oz. raw boneless top sirloin steak, sliced
- 4 oz. diet coke
- 1/2 small onion, sliced
- 1/2 yellow bell pepper, sliced
- 1/2 red bell pepper, sliced
- 4 baked tortilla chips, crushed
- 1/4 c. salsa
- 2 Tb. fat-free sour cream
Grilled Asparagus Frittata

To trim the asparagus, simply break off the tough end of each spear by bending it gently until it snaps
- 1 lb. asparagus, tough ends trimmed
- 1 Tbs. extra-virgin olive oil
- Kosher salt and freshly ground pepper, to taste
- 2 1?2 Tbs. unsalted butter
- 1 leek, white and light green portions, halved, thinly sliced and rinsed well
- 6 eggs
- 1 ?4 cup heavy cream
- 1 ?2 cup finely grated pecorino romano cheese
- 3 Tbs. finely chopped fresh chives
- 3 Tbs. minced fresh basil
- Crumbled goat cheese, (ch�e) for garnish (optional)
Grilled Trout with White Beans and Caper Vinaigrette

Prepare barbecue (medium-high) heat
- If you use store-bought trout, ask your fishmonger to bone and butterfly the whole trout for you.
- 1/4 c. (1/2 stick) unsalted butter
- 1 Tb. olive oil
- 1/4 c. minced shallots
- 2 Tb. white balsamic vinegar
- 1 Tb. drained capers
- 1 tsp. chopped fresh rosemary
- 1 (15 oz.) can white beans, rinsed and drained
- 1 tsp. finely grated lemon peel
- 2 (10 oz.) cans cleaned boned butterflied trout
- 1 c. coarsely sliced arugula
