Caramel Apple Pie

Use Michigan Ida Red or Cortland apples for juiciness, tartness and stability
- Crumb Topping:
- 1 9-inch deep-dish pie crust, frozen
- 3/4 c. all-purpose flour
- 1/4 c. old-fashioned oats
- 1 c. sugar
- 1/4 tsp. salt
- 1/2 c. (1 stick) butter, room temperature
- Filling:
- 5 medium to large Cortland or Ida Red apples, peeled, cored and chopped
- 1 c. sugar
- 2 tsp. all-purpose flour
- 3 Tb. melted butter
- 1 tsp. cinnamon
- 1 tsp. lemon juice
- 1/4 tsp. salt
- Caramel Sauce:
- 1/2 (14 oz.) can sweetened condensed milk
- 1/2 c. light corn syrup
- 1/2 c. sugar
- 1/4 c. brown sugar
- 2 Tb. butter
- 1 1/2 tsp. vanilla
- Per serving: 600 calories, 23 gf

Raspberry Puff Turnovers

- Filling:
- 3 tablespoons Instant ClearJel or cornstarch, If you use cornstarch, you'll want to dissolve it in cold water, rather than stir it into the sugar.
- 2/3 cup sugar
- 3 cups raspberries, fresh or frozen
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 large egg beaten with 1 tablespoon water, to seal pastries (optional)

- 1/4 cup potato flour, (optional)*
- 1/4 cup soy flour, (optional)*
- 1/4 cup sugar
- 2 1/2 teaspoons instant yeast
- 1 1/2 teaspoon salt
- 2 eggs
- 2 teaspoons vanilla
- 1/8 teaspoon lemon oil OR 1 tablespoon grated lemon peel OR 1 teaspoon Sweet Dough Flavor
- *If you choose not to use the potato flour and/or soy flour, reduce the milk by 1 tablespoon.

- 20 jumbo shrimp, peeled and deveined (about 1/2 lb.)
- 20 (1") cubes fresh pineapple, (about 1/2 lb.)
