Butter Caramels

Combine all ingredients in a heavy pan
- 1 can sweetened condensed milk
- 1 pint light Karo syrup
- 2 lbs. brown sugar
- 1 lb. butter, not margarine
Cheesy Zucchini Boats

1. Preheat the oven to 375 degrees
- 4 zucchini, halved lenthwise
- 3 Tb. extra-virgin olive oil
- 1/2 red onion, chopped
- 5 plum tomatoes, chopped
- 1 c. breadcrumbs
- 1/2 c. walnuts, toasted, and coarsely chopped
- 1/2 tsp. dried oregano
- salt and pepper
- 6 oz. shredded mozzarella cheese
- 1/2 c. grated parmesan cheese
Chocolate Caramel Pecan Cake

Prepare cake mi acording to package directions, except substitute melted butter for the oil
- 1 (18.25 oz.) pkg. Duncan Hines dark chocolate fudge cake mix
- 1 (20 oz.) bottle Smucker's caramel sundae syrup
- 1 (8 oz.) whipped topping, thawed
- 1 c. toasted and chopped pecans
- 1/2 (4 oz.) bar bittersweet chocolate, grated, or shaved with a peeler
- Garnish: chopped toasted pecans and choclate curls, (best to use chocolate almond bark and vegetable peeler)

In a small saucepan over medium-high heat, combine the milk, water, cardamom, cinnamon, ginger, cloves, peppercorns...
- This special seasonal chai was created by Juanita Crampton, a found of Sattwa Chai, a national company producing a line of delicious chai teas.
- 1 c. milk
- 1 c. water
- 1/2 tsp. cardamom seeds
- 1 cinnamon stick, 3" long, broken
- 1 " piece ginger root, peeled and sliced
- 8 whole cloves
- 10 whole black peppercorns
- 3 strips fresh tangerine peel, 1/4" wide, 3" long
- 1 piece vanilla bean, 1" long
- 1 Tb. loose black tea leaves, such as Darjeeling
- 1 1/2 Tb. sugar, or to taste
Green-Olive Chicken and Couscous

In a skillet with a tight-fitting lid, heat the olive oil, two turns of the pan, over medium -high heat
- 2 Tb. olive oil
- 1 lb. skinless, boneless chicken breast , chopped
- 1 onion, chopped
- 1 zucchini or summer squash, chopped
- 2 cloves garlic, finely chopped
- 2 tsp. grated peel and juice of one lemon
- 1/2 tsp. crushed red pepper
- 1/2 tsp. fennel seed
- pinch ground cinnamon
- salt and pepper
- 1 c. green olives, chopped
- One (32 oz.) chicken broth, (4 cups)
- One (10 oz.) box instant couscous
- 1/4 c. flat-leaf parsley leaves, chopped
- 1/4 c. mint leaves, finely chopped

- 1 (32 oz.) cranberry juice cocktail
- 1 (12 oz.) can frozen pineapple juice concentrate

- 1 shallot, minced
- 2 Tb. minced fresh cilantro
- 1 Tb. fresh lime juice

- 6 (5 ounce) salmon fillets
- 4 cloves garlic, minced
- 1 tablespoon white wine
- 1 tablespoon honey
- 1/3 cup balsamic vinegar
- 4 teaspoons Dijon mustard

- 1 tablespoon chopped fresh oregano

- 2 c. flour
- 1 c. sugar
- 1/3 c. unsweetened cocoa powder
- 1 tsp. baking powder
- 1 c. butter, softened
- 1 large egg
- Filling:
- 1 (8 oz.) pkg. cream cheese, softened
- 2 large eggs
- 1 tsp. vanilla extract
- 1 (16 oz.) pkg. powdered sugar
- 1/2 c. semisweet chocolate chips
- 2 Tb. butter
