Fresh Corn Casserole

Preheat oven to 350 degrees
- 2 cups fresh corn kernels
- 1/2 cup (1 stick) butter, softened
- 2 eggs
- 1 1/2 tsp salt
- 1 cup sour cream
- 1 cup Monterrey Jack cheese
- 1/2 cup corn meal
- 1 (4-oz) can chopped green chilies or 4 oz chopped pickled jalapeno peppers
Chili Cheese Pie

Preheat oven to 400 degrees
- Crust:
- One ready-to-bake crust
- cornmeal
- Filling:
- 1 1/4 cups shredded Monterey Jack cheese
- 1 1/4 cups shredded sharp Cheddar cheese
- 1 can (4 oz) chopped green chilies, drained
- 3 eggs
- 3/4 cup sour cream
- 1/2 tsp onion salt
- 1/2 cup chopped fresh tomato
Noodle Candy

Melt chocolate and butterscotch chips over very low heat, stirring constantly
- 1 can Chinese chow mein noodles
- 1 small pkg chocolate chips
- 1 large pkg butterscotch chips
- 1 small can peanuts
Lit'l Smokies Blitzing Bagel Dogs

Preheat oven to 375 degrees
- 1 pkg Hillshire Farm Lit'l Smokies
- 1 11-oz can refrigerated breadsticks
- 1 tbsp poppy or sesame seeds (optional)
Lemon Ricotta Meltaways

This recipe is from The Secret Life of a Chef's Wife 2013
- Lemon glaze:
- 1/2 cup unsalted butter
- 3/4 cups granulated sugar
- 1 large egg
- 1/2 tsp almond extract
- 2 tbsp lemon juice
- 3/4 cup ricotta cheese
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp kosher salt (1/4 tsp if using regular salt)
- zest from 1 lemon
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice
Honey-Chicken Salad
By june
Combine first 4 ingredients
- 4 cups chopped cooked chicken
- 3 celery ribs, diced (about 1 1/2 cups)
- 1 cup sweetened dried cranberries
- 1/2 cup chopped pecans, toasted
- 1 1/2 cups mayonnaise
- 1/3 cup honey (or slightly less)
- 1/4 tsp salt
- 1/4 tsp pepper
- Garnish: chopped toasted pecans
Spiced Pumpkin Softies

Place raisins in small bowl; fill with hot water to cover
- Frosting:
- 3/4 cup golden raisins
- 2 sticks (1 cup) light or regular butter, softened
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 tbsp pumpkin pie spice
- 2 tsp vanilla extract
- 3/4 tsp baking soda
- 1 large egg
- 3/4 cup canned pumpkin puree
- 2 1/2 cups all-purpose flour
- 2 1/2 cups confectioners' sugar
- 6 tbsp (3 oz) 1/3-less-fat cream cheese, softened
- 1 tbsp milk
- 1/2 tsp orange extract
- Orange food color
Chipotle Sloppy Joes

- 1 lb ground beef (95% lean)
- 1/4 cup chopped onion
- 3/4 cup ketchup
- 1/2 cup frozen corn
- 1/2 cup canned black beans, rinsed, drained
- 1/2 cup tomato sauce
- 1 to 2 tsp minced chipotle peppers in adobo sauce
- 1/2 tsp ground cumin
- 1/4 cup chopped fresh cilantro
- 1/4 tsp salt
- 1/4 tsp black pepper
- 8 hamburger buns, split
Corn Dog Casserole

In a skillet, saute onions in butter for 5 minutes
- 2 tbsp butter
- 1 1/2 cups sliced green onions
- 1 1/2 lbs hot dogs
- 2 eggs
- 1 1/2 cups milk
- 2 tsp rubbed sage
- 1/4 tsp pepper
- 2 pkgs (8.5 oz each) corn bread mix
- 2 cups (8 oz) shredded sharp cheddar cheese
Baked Chicken Breasts With Parmesan-Garlic Crust

Adjust oven rack to upper-middle position and heat oven to 425 degrees
- 1 cup bread crumbs, preferably fresh*
- 1/2 cup grated Parmesan cheese
- 3 garlic cloves, minced
- 2 tbsp extra-virgin olive oil

- 4 boneless, skinless chicken breasts (6 to 7 ozs. each), trimmed
