Tex Mex Squash Casserole

Preheat oven to 400 degrees
- 3-4 medium yellow summer squash, sliced (about 5 cups)
- 1 pkg (8 oz) shredded cheddar or Colby-Jack cheese, divided use
- 1/2 medium onion, chopped
- 1 can (4 oz) chopped green chilies
- 2 tbsp all-purpose flour
- 1/4 tsp salt
- 1/3 cup salsa
- 2 green onions, sliced
- 2 tbsp chopped red onion
Irish Cream Cake
By june
Preheat oven to 350 degrees
- Irish Cream Frosting:
- 1 cup water
- 2 tbsp instant coffee
- 1 (18.25 oz) box white cake mix with pudding
- 1/3 cup vegetable oil
- 3 large eggs, lightly beaten
- Irish Cream Frosting (recipe follows)
- 2 (6 oz) packages slivered almonds, toasted and cooled completely
- 1/4 cup Bailey's Irish Cream liquor
- 1 1/2 tbsp instant coffee
- 1 cup (2 sticks) butter, softened
- 4 cups confectioners' sugar
Four Layer Dessert

First Layer: Mix together and press into a 9x13 inch pan
- First Layer:
- 1 cup flour
- 1/2 cup margarine
- 1 cup chopped pecans
- Second Layer:
- 1 1/2 cup powdered sugar
- 1 package (8 oz) cream cheese
- 1 cup Cool Whip
- Third Layer:
- 2 cups milk
- 1 5/8 (3 5/8 oz) instant chocolate pudding
- 1 5/8 (3 5/8 oz) instant vanilla pudding

- 1 (12 oz) container frozen whipped topping, thawed
- 1 (16 oz) container ready-to-spread chocolate frosting
Honey Soy Pork Chops

Warm oil in a large nonstick skillet over medium-high heat
- 1 tbsp canola oil
- 4 bone-in pork chops (1 1/2 lbs)

- 3/4 tsp cumin
- 2 tbsp honey
- 1 tbsp low-sodium soy sauce
- 1 1/2 tsp Dijon mustard
- 1 (16 oz) pkg frozen broccoli florets, thawed

- 6 apples, pared and sliced
- 3 tsp cinnamon
- 4 tsp sugar
- 4 eggs
- 2 1/2 cups sugar
- 1 cup oil
- 2 1/2 tsp vanilla
- 1/2 tsp salt
- 3 tsp baking powder
- 1/3 cup orange juice
- 3 cups flour
Chinese Five-Spice Grilled Chicken

In large bowl, stir sherry, sesame oil, five-spice powder, and ground red pepper
- 1/4 cup dry sherry
- 1 tbsp Asian sesame oil
- 1 tsp Chinese five-spice powder
- 1/4 tsp ground red pepper (cayenne)
- 1 cut-up (8 pieces) chicken (about 3 1/2 lbs) skin removed from all but wings if you like
- 1/3 cup hoisin sauce
- 1 tbsp soy sauce
- 1 tsp sesame seeds

In a large bowl, cream shortening and sugar until light and fluffy
- Frosting:
- 1/4 cup shortening
- 3/4 cup sugar
- 1 egg
- 1/2 cup sour cream
- 1/2 tsp vanilla extract
- 1 1/3 cups all-purpose flour
- 1/4 tsp each baking soda, baking powder and salt
- 2 tbsp butter
- 1/2 cup confectioners' sugar
- 1/4 tsp vanilla extract
- 3 to 4 tsps hot water

- 1/3 cup butter
- 1/4 cup chopped fresh chives
- 1 tsp minced garlic
- 1 3/4 cups whole buttermilk
- 3 cups baking mix (such as Bisquick)
- 1 1/2 cups grated sharp Cheddar cheese

Mix mayonnaise, vinegar and sugar in small bowl
- 1 (12 oz) pkg broccoli slaw
- 6 tbsp mayonnaise
- 6 tbsp vinegar
- 6 tbsp sugar
- 1/2 cup diced red onion
- 1/2 cup raisins
- 1/2 cup shelled roasted sunflower seeds
- 4 slices cooked bacon, crumbled
