Black Bean Soup

Heat oil in Dutch oven or large pot over medium heat until hot
- 2 tbsp olive oil
- 2 slices thick-cut bacon, diced
- 1 medium onion, chopped
- 1 tbsp minced garlic
- 2 (15 oz) cans black beans, drained, rinsed
- 1 (10 oz) can rotel tomatoes
- 3 cups reduced-sodium chicken broth
- 1 tbsp sherry wine vinegar or red wine vinegar
- 1 tsp ground cumin
- 1/4 tsp hot pepper sauce
- 6 tbsp sour cream
- 1/4 cup sliced green onions
Loaded Baked Potato Soup

In a 12-inch skillet, cook bacon over medium heat 6 to 7 minutes or until crisp; drain on paper towels
- 1 pkg (12 oz) bacon
- 1 1/2 cups chopped onion
- 6 cups chicken broth (from two 32 oz cartons)
- 2 lb baking potatoes, peeled and cubed
- 2/3 cup butter
- 3/4 cup all-purpose flour
- 4 cups milk
- 1 tsp salt
- 1 tsp freshly ground pepper
- 1 cup diced cooked ham
- 1 container (8 oz) sour cream
- 2 1/2 cups shredded sharp Cheddar cheese (10 oz)
- 3/4 cup sliced green onion

Mix together butter and confectioners' sugar
- 1/2 cup softened butter
- 4 1/2 cups sifted confectioners's sugar
- 4 1/2 tbsp orange juice
- Grated rind for extra flavor

- 2 1/2 cups light brown sugar

- 10 ozs process American cheese, cubed
- 1/4 to 1 tsp cayenne pepper, optional
- 1/2 lb sliced bacon, cooked and crumbled
