Grilled Italian Burgers

These are awesome
- 3 lbs lean ground beef
- 1 lb bulk sweeet Italian sausage
- 1 T minced onion
- 1 t minced garlic
- 2 t Italian seasoning
- 1 T light olive oil
- 1 t salt
- 1 t pepper
- 1/4 c melted butter
- 12 small baguettes split
- mozarella cheese (if desired)
- peppers and onions (if desired)
Crispy Baked Cauliflower

Place cauliflower in a saucepan with a small amount of water
- 4 c cauliflowerets
- 6 T all purpose flour
- 1/4 t garlic powder
- 1/4 t paprika
- 1/4 t pepper
- 2 1/2 c cornflakes, crushed
- 2 egg whites
Slow Cooked Southwestern Chicken

In a 2- or 3-qt. slow cooker, combine the beans, broth, tomatoes, chicken, salsa, corn and seasonings
- 2 cans (15 ounces each) black beans, rinsed and drained
- 1 can (14-1/2 ounces) reduced-sodium chicken broth
- 1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
- 1/2 pound boneless skinless chicken breast
- 1 jar (8 ounces) chunky salsa
- 1 cup frozen corn
- 1 tablespoon dried parsley flakes
- 1 teaspoon ground cumin
- 1/4 teaspoon pepper
- 3 cups hot cooked rice
Corn Chowder

Fry bacon until crisp; add onion and stir and cook approx 5 min
- 4 slices bacon, diced
- 1/4 c chopped onion
- 2 c corn frozen or canned
- 1 pint tomatoes or 4-5 fresh
- 3 c diced potatoes
- 1 T granulated sugar
- 2 t salt
- 1/2 t paprika
- 2 1/2-3 c boiling water
Easy Pull Apart Pizza Bread

Preheat the oven to 350. Cut pizza dough or biscuits into quarters
- 1 bread dough-you can use 2 cans of pizza dough or bisquits
- 2 c of your favorite cheese - cheddar, Italian mix, mozzarella
- 2 t oregano
- 1/3 c olive oil
- 1 pkg (8oz) pepperoni (or meat of your choice)
- 1 c Parmesan
- 1/4 c melted butter with 1 t garlic powder
Chii Egg Spread

MIX and refrigerate for hours
- 8 each hard cooked eggs, chopped
- 1/2 cup mayonnaise
- 2 teaspoons lemon juice
- 1 tablespoon finely chopped onion
- 1 teaspoon chili powder
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon prepared mustard
- salt to taste
Kiwi, Goat Cheese, and Toasted Pecan Salad

Mash 1/2 c cubed kiwis with fork; press pulp through a fine mesh sieve set over a bowl to extract 2 T juice
- 8 kiwis peeled and cubed
- 1/4 c EVOO
- 1 T white balsamic vinegar
- salt and pepper
- 10 oz field greens
- 4 oz goat cheese, crumbled
- 1/2 c toasted pecans
Crispy Cheddar Chicken

- 2 lbs chicken tenders or 4 large chicken breasts
- 2 sleeves Ritz crackers
- 1/4 t salt
- 1/8 t pepper
- 1/2 c whole milk
- 3 c grated cheddar cheese
- 1 t dried parsley
- Sauce
- 1 can cream of chicken soup
- 2 T sour cream
- 2 T butter
Pear Crumble Pie

- Filling
- 1/3 c sugar
- 1/2 t cornstarch
- 2 T flour
- 1/8 t cinnamon
- 5 c sliced, peeled, firm pears
- Topping
- 1/3 c sugar
- 2/3 c flour
- 1/2 t cinnamon
- 1/4 t ginger
- 1/3 c softened butter
Greek Salad Dressing

Place all the ingredients in a pint jar with a tight fitting lid
- 1/2 c olive oil
- 1/4 c canola oil
- 1/3 c fresh lemon juice (about3 lemons)
- 1 t salt
- 1/4 t pepper
- 1 clove garlic, minced
- 1/4 t dried oregano
- 1/4 t sugar
