Key Lime Bars

Preheat oven to 350. Spray bottom of 9x13 cake pan with nonstick spray
- Crust:
- 1 cup unsalted butter
- 1/2 cup confectioners sugar
- 2 cups all purpose flour
- pinch kosher salt
- Lime Topping:
- 4 large eggs, lightly beaten
- 2 cups sugar
- 6 T all purpose flour
- 1/4 cup fresh lime juice plus 2 T.
- or bottled key lime juice
- 2 t lime zest grated
- confectioners sugar for garnish
Pineapple Cherry Cake

PREHEAT oven to 325. SPOON cherry pie filling into a 13x9 pan
- 1 can cherry pie filling
- 1 can 8oz crushed pineapple undrained
- 1 package yellow cake mix
- 2 sticks margarine
- 1 1/3 cups flaked coconut
- 1 1/4 cups chopped pecans
Mocha Custard

Preheat oven to 325. Combine milk, egg substitute, sugar and instant coffee in med bowl
- 2 c reduced fat 2% milk
- 1 c cholesterol free egg substitute
- 1/2 c sugar
- 2 T no sugar added mocha flavored instant coffee
- Grated orange peel or 6 chocolate coffe beans(optional)
3 Bean Salad

- 1 can green beans, drained
- 1 can kidney beans, drained and rinsed
- 1 can garbanzo beans, drained
- 1 medium red onion, sliced thin
- 1/2 cup oil
- 1/2 cup red wine vinegar
- 3/4 cup sugar
- 1/2 teaspoon dried tarragon
- 1 teaspoon salt
- 1/2 teaspoon pepper
Pork Tenderloin alla Napoli

Preheat oven to 400. Heat the oil in a cast iron skillet over med high heat
- 1 T olive oil
- 2 (3/4 lb) pork tenderloins
- 2 Roma tomatoes, seeded and chopped
- 1/4 chopped green olives
- 1/4 c dry white wine
- 1 t chopped fresh rosemary
- 2 cloves garlic minced
- 1/2 t salt
- 1/4 t pepper
- 1/2 c heavy cream
Pineapple Casserole

Preheat oven to 350. Cream butter and sugar together
- 1 stick butter
- 3/4 c sugar
- 4 eggs, well beaten
- 20 oz can crushed pineapple, drained
- 8 pieces white bread, cubed
Chocolate Mousse

- 1 teaspoon unflavored gelatin
- 1 tablespoon cold water
- 2 tablespoons boiling water
- 1/2 cup sugar
- 1/4 cup Hershey's® cocoa
- 1 teaspoon vanilla
- 1 cup heavy cream (very cold)
Crispy Baked Ravioli

Preheat oven to 425. Mist a large, rimmed baking sheet with PAM
- 1 c seasoned bread crumbs
- 2 large eggs
- salt
- 14 oz pkg of frozen cheese ravioli
- warmed marinara sauce, for dipping, optional
Chinese Tuna Casserole

- 2 c chow mein noodles, divided (can use reg cooked pasta instead)
- 2 cans 6oz each tuna in water, drained
- 1/2 c salted cashews
- 1 c sliced celery
- 1/4 c chopped green onion

Slow Cooked Pork Roast

In a large saucepan, combine the first nine ingredients
- 2 cans (8 ounces each) unsweetened crushed pineapple, undrained
- 1 cup barbecue sauce
- 2 tablespoons unsweetened apple juice
- 1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
- 1 teaspoon minced garlic
- 2 teaspoons grated lemon peel
- 1 teaspoon Liquid Smoke, optional
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 boneless pork loin roast (3 to 4 pounds)
